Oh oh something I can chime in on. I saw this photo a while ago on Reddit and was like oh that's cool I wonder how much effort it'll take to do that to my girlfriend's Appa plushy
Found this chart for the lifting power of balloons. (Easier because it's probably like average balloon fill rate than me guessing volume)
https://www.balloons.com/HeliumWeightChart.pdf
Found the weight of the plushies on amazon: 7.2 oz (or a similar product's weight)

Now math:
According to the balloon chart above 1oz = 28 grams. So I figured.... 3-4 balloons per oz. So 30 balloons ?

Cool the jumbo tank does 27 11inch balloons. I'll get two, standard engineering rule, just double everything.
Well... Have you tried tieing 27 balloons together... Notice how the strings don't all go up and down ... Remember those high school physics classes about drawing force vector diagrams.

Yeah... Assuming an average balloon angle of 45 degrees... I'm getting 0.7 the lift... So... 42 balloons ? Shoot I'm getting close to my limit...
And also helium balloons leak... So by the time I finish blowing them all, I have less than the 54 balloons...
Also do you know how much volume 42 balloons take ? Assuming like 6 balloons per layer that's 7 11 inch balloons in height... Which is about my 8 foot ceiling... So now I have height restrictions.
In the end I gave up and resorted to flying another smaller stuffed animal.
Tl;dr they either gutted that appa. Or they just threw it in the air and caught the photo at the right time, cause I tried this. Also don't do napkin math at work and then impulse buy. Do your math, double check it and have a friend tell you you're not stupid first.
Edit: some words and fixing a broken link
This seems pretty close -

Ugh, I hate stuffed animals. Or so I thought. My kid owns dozens and I can't ever justify buying her more.
I never thought I'd own one, but then I had a horrifying knee surgery that caused me a lot of pain that flared to intense levels the first few weeks I was of recovery. My wife gave me a stuffed Appa. In my pain-med addled mind, squeezing that stuffed sky bison helped me through the boughts of pain.
He sits in my bedroom on the highest shelf now so the dogs can't get him.

A. Anime figures: Nendoroids would range at about 40-50 USD, with a high shipping cost if they are from Japan. Shipping would be around $10 if it's USA to USA. Due to time constraints, I would recommend buying a preowned figure.
Example may be the Pokemon Red Nendo: http://myfigurecollection.net/item/215491
Things related in this picture: http://myfigurecollection.net/picture/1132004&ref=item%3A129231
Difficulty: Requires some research. There are many figures, and only some of them are available at any one time. You'd also have to go through a third party. Please be careful of China Bootlegs.
B. Plushies: There's a lot of them for Pokemon.
Recommendations:
Difficulty: Easy. However, most will be coming from China, so the quality is often a little off from the pictures. You can visit the "Pokemon Center" for the best bet on legitimate dolls:

Appa is a flying Bison from Avatar the Last Airbender. He comes in soft.

C. Make them question your mental health, but applaud your effort.
Did you know Shibari is a form of rope art believed to originate from Japan? Unlike European bondage, which uses more knot work, shibari is all about the flow of the rope - twist and weaving. Back in the old days, it was a form of torture. Today, it's popular in the kink community as a form of kink, fetish, or sexual play.

D. Membership to crunchyroll: Allows them to watch new anime a week early and in HD
https://www.crunchyroll.com/freetrial/anime/?from=topbar
Difficulty: You should know how easy it is to pirate things like episodes. Your partner may not want this gift as they get anime for free. They may not want to support the industry, which is the main reason you'd get a membership
E. TITANS: http://www.thinkgeek.com/product/1ed4/?srp=7
Difficulty: Please make sure they like the anime. Else, this would be creepy.
Anime is very vague. Stalk them more.

Only one I could find: http://www.amazon.com/Last-Airbender-Inch-Avatar-Plush/dp/B00A7OC9Z8/ref=sr_1_1?ie=UTF8&qid=1419385038&sr=8-1&keywords=appa
It's not really a bison, it has a flat wide tail. It's from a show called the last air bender.
Link but fu....well just ignore the price, you can do better.
