I also started teaching adults fairly recently, and I find them VERY different from my classes for kids. I teach more beginners than intermediate, but see if you can find a book of swimming drills for them. My pool has a copy of the Swimming Drill Book that has a lot of ideas that can be done with swimmers of all different levels.

I do a lot of work with flippers and aqua-joggers to help get their bodies positioned correctly, that way they can learn the technique and travel the length of the pool rather than stopping every 3 feet. Once they get a feel for it, swimming aids can be reduced.

I mostly stick with elementary backstroke (w/ flutter kick) and freestyle, sometimes breaststroke arms over a noodle if they've done enough time with the other two and need another stroke.

The most challenging students are adults that are really fit and muscular, because they sink like rocks! Work on gliding push-offs from the wall to help get enough forward momentum to overcome their muscle weight.

If you have adults that can swim the length of the pool, Swimplan is a good resource for writing sets for them to follow.
