From a grunt's perspective a field watch should be:
Tactical IE not shiney.
Have a back light feature IE Indiglo/Illuminator.
Having a date function is nice.
Durable.
Not too expensive right off the bat, because it's gonna get murdered in the field anyway.
Being digital helps even the dumbest rocks understand the military 24 hour time format.
Long battery life.
Alarm function is pretty nice, so you can wake yourself up (for light sleepers).
My recommendation is your basic digital Timex Expedition or Casio Illuminator. Go simple, go basic. Can't tell you how many of these "cheap" but ultimately reliable watches I've destroyed.
If you want to go +$100 with a Suunto Core or the Casio Pathfinder, you better buy them a few extra batteries, because it'll drink a battery dead in about 6 months. So never deploy with just the battery inside it.

When I was shopping for a wristwatch without knowing much about watches, I figured I would rather get a mechanical analog later that would "beat" several times a second, rather than a quartz analog with a loud stepper motor "ticking" away.
I picked the Timex Expedition for its:
Personal note: It is comfortable to wear 24/7-365-days-a-year with a leather NATO strap. And the leather strap does not look out of place with the watch.
