Best general cruise site (especially for forums) is www.cruisecritic.com and their forums, IMO.
If you have school-age kids you probably have to go during school breaks and that's unfortunately when it's most crowded, because people with kids need to go then. If they're younger and not in school, go a little before or a little after school's out.
I'd start with a shorter 3 or 4 night cruise instead of a full 7 night cruise. Um. It's a big topic, I use www.vacationstogo.com to research cruise prices but there are some other resources out there that other people prefer.
This is not a bad book to look through for cruise planning. The Kindle version is only $2.99. It could be a little less wordy but has some good advice.
