This. My A119 is wired to this smart hardwire kit which enables me to use it when the car is off and has the ability to monitor and cut off power to the device before the car battery voltage drops too low.

If I were you I would definitely apply to work somewhere else. I also would notify HR of the incident in the parking lot, and move to get that person fired. I would also look very hard at these few dash cams.
BlackVue DR650S 2 CH, Thinkware F770 2 CH, and BlackSys CH100B 2CH. BlackVue DR650S you can hook up a Mobile Wifi hotspot to, and it will send out Cellphone notifications via text message of G sensor notifications, and able to live stream via the cloud. Thinkware F770 2CH has superior night vision mode, and has audio notifications of G sensor notifications when you get in and start the vehicle. BlackSys CH100B 2CH looks very basic in comparison, but has the best wifi/cellphone app with options you want, and many other dash cams don't offer.
Anyways, put in complains with HR, get the other guy fired, send out applications & use your social network, and get a new job. GL HF. Seriously get a new job, useless people will put your life at risk until you die, before they will help you.
To always record use a battery setup which charges when the car is on, and the camera runs off that battery when the car is off.

There are lots of dashcams now with parking mode by motion detection, they are not all very good at it though. One of the best I think is the Blackvue DR 3500 FHD dashcam. This is a tubular shaped, all black dashcam that makes for a very stealth installation so that there is little danger of it being noticed and perhaps stolen. This dashcam is recommended by the North American distributor of Blackvue and other quality dashcams as the very best for its motion detection function, and it is affordable.
The dashcam records in high definition 1080P resolution and will take an extended video storage card up to 126GB which means that it will hold over 40hrs of video before starting to loop and record over itself.
This dashcam will serve you well as far as reliability, video quality and dependability, however, you must be aware that there are limitations with any dashcam as to what they can see, since they are in a fixed position in your car.
The next thing you have to consider is how you are going to 'power it up' for a couple of days at a time, it certainly cannot run off your car battery for that long. There are several battery packs that are available but they must be hardwired to your fuse panel, and even then, they depend on you running the car for a period of time. Are you saying that your car is going to sit in the parking lot without moving for a couple of days?
If you don't want to hardwire the dashcam you could use a palm-sized portable power bank which should be good for a couple of days before needing to be recharged.

I've always had a front facing dash cam, the cheap kind, now I'm not skimping and getting one that will always be on. That one is new, has a great rating and records in 2K and uses a capacitor instead of a regular Lithium battery (that usually die because of extreme heat/cold)

Generally speaking, if you wire it to constant power you will run the risk of battery drain, unless you use a battery discharge prevention device. Some basic hardwiring kits have built in voltage protection (or so they advertise), but it's usually set to something low like 11.6v, which is not ideal since you risk deep cycling the battery and causing premature wear.
I have my dash cam (Viofo A119S) hard wired using a Vicovation Vico Power PLUS battery discharge prevention device and set it to automatically cut power to the camera if the car battery drops below 12.2v. It has a switch that allows me to manually change from constant power to accessory power. I mainly use this for when I'm parking in my garage at home. Ideally, a more expensive cam with a true automated parking mode would be better, but I'm pretty happy with this setup for now.

I'm not sure something like this exists. Generally dash cams focus on recording the events of driving accidents with parking modes being an extra perk. Without knowing your budget it is difficult to recommend any cams with good parking modes.
For the battery, dash cams usually have small batteries or capacitors because it is not a good idea to have large batteries from a reliability standpoint. When the camera is constantly running and sitting in extreme temperatures all day, then a large battery is not going to last very long and can potentially be a hazard.
There are a couple options for parked recording though, the most common being hard wiring. You can buy hard wiring kits like the Vicocation power plus and control the voltage cutoff of your battery to make sure you never fully drain it and leave it with enough power to start the engine.
Another option is using something like a cellink b which will charge as you drive the car. It takes ~1 hour 20 min to fully charge so if you do not drive the car often it is probably not the best option.
The last option I can think of is using power banks. Something like this will let you run the cameras for ~ 2 days. You will have to swap it out with another bank to recharge and it can be tedious, but it might be the best option if you are against hard wiring.
As for the wires/installation there are plenty of good videos that show how to run the wires and make them neat and invisible.
How much more is it? I assume it's this kit? Still has a cig adapter it looks like . My cigarette port is ignition-switched.
If you want the camera to run for a set amount of time after the engine is shut off, then have the camera turn off, you'll need some kind of hardwire kit with a timer. The VicoVation Vico-power plus would work, though it's a little pricey (looks like the price has jumped $10 recently).

I bought it just for peace of mind. It was only $12 bux, why not. If its broken, dropped or stopped working, it's covered. I dont think theft is covered, but that's what homeowners insurance is for. So its good to have. I doubt I'd get power surge or low voltage issues, I bought this BMD hardwire kit for true parking mode functionality. And I really don't want an accident to occur.
