I'm doing my first rib smoke this Saturday on my 18.5. I haven't tried it yet, but I bought the Weber 6605 rib rack because I'd heard that getting ribs on the WSM is a bit of a hassle. Without cutting them, I mean. I sincerely hope I don't mess them up, and that is why I'm not inviting anybody over. Only my family should have to suffer lol.

Ribs are great to experiment with. They go on sale often and dont take long to cook. I use one of these racks on my 18" to fit more. Usually I just fold them in half.

You should definitely do some cheez-its too. Dump the box in a foil pan, toss with cajun seasoning or bbq rub and just a little olive oil to get it to stick. They only need like 30-45min so I've just been throwing a pan on at the end of a smoke while the coals are burning out.
