With both recipes you can add more turkey or double the entire recipe to have more leftovers (my mom uses like 3 packages of ground turkey for the chili).
Some tweaks I add to the chili are less chicken broth so it's thicker and I add red pepper flakes for a little more spice. I also usually use an extra can if beans.
Finally Rachel Ray has a book called "Week In A Day" in which (I believe) she gives you recipes that will male food for the week ahead.
