Last year I was also looking for someone to sharpen my knives. I ended up buying a whetstone and learning how to do it myself. Can regular waterstones be used to shaprened stainless steel knives? I've read that newer stainless steels are too hard to be sharpened by anything except diamond coated/plated stones.
