It was packaged wonderfully and setup was a breeze; the only "hurdle" is that each user has to setup an app account if they want to track anything. Since it's wifi the data will sync from the scale to my phone no matter where the phone is, and without having the app open. Data can sync from the Weight Gurus app to MFP, Fitbit, and Google Fit which is handy. More importantly, if you log in to the website for the app you can download a CSV of your entries.

I have no experience with the Nokia but it seems kind of mediocre for the price, I own this basic one while my parents own this one but if you want features I don't think you could go wrong with:

Google Sheets, for tracking I used an app called Weight Guru's which syncs with my bathroom scale. The graph in the app isn't as pretty, but it can export the data, so I threw it into Sheets and made the graph in there.

I LOVE LOVE LOVE this one. It has an app on my phone and automatically syncs my weigh ins and has graphs for bmi, water weight, muscle mass. I weigh every day, but don't look at the scale. I check the app once a week to see my progress, so I don't get that day to day obsession. I have a profile set up, my bf had a profile set up. When he steps on it, it syncs to his app only, when I step on it syncs to my app only. Bc we are so different in weight, it automatically recognises who is in the scale. If I can figure out how to get a picture on redit, I'll show you a screenshot of the app if you want.

If you were truly eating 1000 calories a day and working out, you would lose weight rapidly. Either you're underestimating the calories you're actually eating due to not using a food scale/knowing the exact nutritional content of food, or you didn't stay on the diet long enough to notice the effects. There's no tricks or gimmicks if weight loss is your goal, eat 1700~ calories a day and log it all for 2+ months with daily weigh ins, and the results will be there.

I would suggest purchasing a Wi-fi scale (https://www.amazon.com/GreaterGoods-Conductive-Technology-Measurements-Monitoring/dp/B01IFYLARO) and stepping on it at least once a day. The good thing about the Wi-fi scale is you don't have to look at the number on the scale if you think that may demotivate you, you could just step on it, listen for the beep to confirm its logged your weight, and walk away. It tracks all you weigh ins automatically, doesn't require you finnicking around with your phone's bluetooth like other scales, and has a web interface so you can access all your data whenever you want.

I would also caution you against comparing your scale weigh-ins on a daily/weekly basis. Water, diet and everything else will cause your weight to fluctuate 6lbs in both directions day-to-day, so you won't have any hard evidence you're actually losing weight until probably 3+ weeks in and you have enough data points to see the overall trend of your weigh-ins.
