There are a few different places you can start:
If you HAVE to start from the beginning just read the first 24 issues, you can then skip over to Claremont's era
My recommendation would be to either start with Chris Claremont's 1st era (aka 70's) & 2nd era (aka 80's) on Uncanny X-Men or from 2001-ish (aka modern X-Men) time period onwards onwards. Either way just skip the 90s for now, you can alway go back to that later.

Strap the fuck in, because I spent way too much time researching this. Amazon links provided for reference, and I'm not really taking into consideration price issues or print availability, just so you're aware. My main attempt was to make as complete a collection in as few volumes as possible.
So, I'm focusing on the Claremont run of Uncanny X-Men. Whether crossover issues or miniseries are there aren't considerations, though most content is going to have them in there as well. Obviously the event-specific omnibus or hardcover collections are going to contain all the relevant tie-in issues of the sister series (X-Factor or New Mutants). The one exception is going to be Fall of the Mutants, since it was a thematic crossover rather than a storyline crossover, so you don't need to pick up Volume 2 for the events of Uncanny to make sense, since that focuses more on X-Factor.
Additionally... the stuff between Uncanny 244 and 269 is from the Claremont/Lee omnibus Vol. 1... and it's out of print and running for like $350 right now. There's some pieces that are going to be missing if you don't want to read that one, so I'm gonna pick out the trades that best throw that stuff in. This isn't exhaustive, and I'm sure there's some obscure collection from like, 1993 that might have the issues, but I'm not all-knowing, as much as I love the X-Men.
I'm also leaving the Omnis since you mentioned you're grabbing them, but you can grab the Marvel Masterworks 7-9 to cover the material on Omnibus 3.

X-Men Chris Claremont/Jim Lee Omnibus Alternatives (collects Uncanny 248, 256-258, 265-267, 270-280 and X-Men 1-3):
As a final alternative, you could track down the Marvel Essentials collections 9-11 (you'll miss Uncanny 245 with this, so you might wanna grab 8 as well?), but these are black and white collections printed on news print.
So uh... there you go. I'm sure you might find the collections cheaper elsewhere (InStockTrades or other sources) or there might be other odd trades I'm missing. If you want to collect physically, there you go. If you just wanna read them, hit up Marvel Unlimited.
You don't need to read anything to understand what is going on in the movie. But probably the best way to understand everything is to first know everything about all of the mutants in the movie. So go to IMDB, write down the names of all of the mutants appearing in DoFP and then go to marvel.wikia.com the main marvel universe is universe-616
Even though he won't be in a lot of it, read up about Biship, a lot of the future stuff has to do with him. Read up on the sentinels and Bolivar Trask. Maybe read about the sentinel Nimrod. There are some links below that could really help you. Really though, wikipedia and the marvel wiki and I'm sure there is an X-Men wiki are amazing resources.

EDIT: Forgot to say that the DoFP story line is in the first Uncanny X-Men Omnibus.
He only did 11 issues on the run you're talking about, and they were some of the best selling issues ever, so there are tons of copies out there and buying them individualy is pretty cheap.
