Schedule 40 is just fine. It can handle all the pressure your water system can put out. But you need to know that PVC degrades in sunlight. So paint it or tape the pipe please, to keep the sun off of it.
You know, you are thinking of building a clunky and rigid misting system. Half inch pipe is really overkill for this. You can do this cheaper and better with a 1/4" kit:

You can easily move each mister around as needed, and if you install a valve on each line, you can also throttle them as needed. Lots of water to some plants, less to others.
For the nozzle the droplet size primarily does not depend on the diameter of the outlet, but on the method of fading and splitting the flow. You don’t have to use a 45 micron nozzle to get "air roots", buy a quality 100 micron nozzle - it will give you drops from 5 to 10 microns.
