If you decide to jump into the pool on water cooling, make sure that you reconsider your case before getting your feet wet. The NZXT S340 Elite is not a very forgiving case for custom setups, mainly due to the fact that its cable bar obstructs the ability to install a radiator. I have seen some setups where the reservoir has been crammed at the top of the case, but this will prevent you from being able to use a second 120mm fan to vent exhaust. Your GPU has three air fans and it does not require water cooling: it would be better served by keeping the space open to allow air flow to circulate. Since the Kraken x62 has a six-year warranty, and the only real drag about AOIs is their poor longevity, I would not really worry about replacing it with a custom setup unless you really want to get into water cooling, and you have to have the aesthetics of a reservoir, tubing, etc. These are other issues to consider aside from u/Ooftyman suggestions about price and the fun of water cooling. I have a very similar build -- go with the Zotac GeForce 1080 Ti AMP! Extreme instead of your Asorus. It has the same great three fan flows, but it beats every clocked rate and a comparable price. It is the best currently available commercial graphics card in the world.

What is the difference between all these cards and why is the same card sometimes over $200 different?

2x $779.99 of RAM (you only need 16GB or 32GB tops out of the 128GB, sell the rest):

1x $759 GTX 1080Ti - keep it (literally the best consumer GPU atm, very popular and has better price/performance than $1200+ Titans etc):
