I'm on vegan CICO not vegan keto, but I know people who are and they tell me they eat: Beyond Meat (1 gram net carb), Beyond sausages (2 net carbs), Gardein chick'n strips are 4 net carb, Some nutritional yeasts are 1 net carb, Mushrooms 1 net carb, bell peppers are 3 net carb per 100 grams, 2 cups of spinach = 1 net carb, chinese cabbage = 1.5 carb per cup, some wraps are 1 or 2 net carbs, low carb bagels, low carb cookies, avocado pesto, low carb bread, shirataki rice & noodles. Here's an example of a low carb pizza wrap. Many of the more nutrient dense veggies are lower carb, so that's good, but really vegan keto is going to require a lot of creativity with sauces etc. Just doing low carb is much easier obviously.

Edit: The carbalose flour on Amazon is by Tova/Carbquick and has a higher net carb count than the Dixie brand. It will still work, but your net carbs will be higher. Tova has 19 grams net per cup vs. 8 grams net per cup for Dixie, which is the approximate amount used here. This will put your net carbs at around 3g per slice. Still keto! Just something to keep in mind.

Also, lupin flour is made from a legume. The interwebs tell me that if you are allergic to peanuts it's possible that you might have a reaction to it. Safety first!

I’m finally able to experiment with breads again, and I’ve branched out into different shapes, as well as feeling more comfortable with other ingredients. With a yummy taste and lovely texture, perfect for sandwiches or toast, or whatever…..this is the result.

If you are new to low-carb breads, a few things to note.

  1. A high-carb syrup is used to feed the yeast. Don’t panic! This is used up by the yeast and none of it remains.
  2. One of the many side effects of this is that low-carb breads tend to only get one good rise, so there’s no punching it down and letting it rise back up to develop texture and flavor. In this recipe I’ve created a sponge to help combat these issues.

    Below is the recipe:

    115g carbalose flour(not all carbalose flours are the same, this is the lowest net carb version I’ve found)

    26g oat fiber

    123g vital wheat gluten

    90g lupin flour (not all lupin flours are the same – I’ve poured several pound of disasters out in my compost. I use this one)

    1.5 tsp salt

    1 tsp xanthan gum

    1/4 tsp ginger

    2 eggs, room temp

    26g sour cream, room temp

    2 tbsp olive oil

    1.5c water, divided

    1/8 c butter, softened, cut into small pieces

    1.5 tsp corn syrup or honey, divided

    3.5 tsp instant yeast, divided

    The technique:

    Combine the dry ingredients minus the yeast.

    Make the sponge: scoop out ¾ c of the mixture, and combine them in a bowl with ½ c cool water, ½ tsp of corn syrup, and ½ tsp of yeast. Let this sit for 4-6 hours, or better yet, over night.

    When your sponge is ready, prepare a cup of warm-ish water. Mix ½ cup of the water with 1 tsp of corn syrup and 1 tbsp instant yeast. Using the paddle attachment on a stand mixer, mix in the sponge along with the other wet ingredients (minus the butter). Pause the machine and sift in the dry ingredients. Mix for a couple of minutes with the paddle mixer, then add in the butter, and if it seems dense or tough, add more warm water. I usually add another 1/3 to ½ cup. Then switch to the dough hook and mix on low for 10 minutes. If the dough is shaggy or sticky, try kneading for a few more minutes before adding any more flour. If you do need to add more flour, dust your work surface with carbalose, dump the dough out onto it, dust more on the ball of dough, and knead it in by hand.

    If it’s not shaggy or sticky, turn it out onto your work surface. No additional flour should be necessary, even for dusting. Knead it briefly to help form it into a roughly 6” ball, tucking the edges in and pinching them as you go. Using a sharp knife, slash an X in the top.

    Cut a piece of parchment paper to fit comfortably in your 6 quart dutch oven. Place the parchment on a cookie sheet, place the ball on the parchment, and place all of it in a warm place. Depending on your location, humidity, elevation, etc., proving time could be 30 minutes, could be a few hours.

    As it proofs, place a 6 quart cast iron dutch oven with a lid in your oven and preheat it to 450 degrees for at least 30 minutes.

    When your dough has proofed and your dutch oven is hot, take your dutch oven out, place your dough and parchment in the pan, and put on the lid.

    Turn the oven down to 375F, and bake for ~30 minutes, until the crust is golden brown and the internal temp is 190 degrees. Take it out of the dutch oven, let it cool on a rack until completely cool.

    I can usually get 15-17 slices out of it – I’m a weirdo who likes the end pieces. Macros per slice are: 103 calories/8.0 carbs/6.2g fiber/1.8g net carbs/4.2g fat/12.7g protein.

Look into TVP - Texturized Vegetable Protein. It's pre-dried soy and available in the bulk sections of some health food stores. Bulks up very nice in water, cheap too. This is just one option, some will be unbranded.

It's generally pretty bland, so do try it out at home to learn how to season it. Works best in highly seasoned things like spaghetti sauce, chili, etc.

Hey, sorry guys. I posted this pretty late; in the midst of my food coma I fell asleep! Please enjoy the recipe.

For the seitan: I followed this recipe pretty much all the way. For convenience:

Ingredients list:

  1. 2 cups wheat gluten
  2. 1 cup nutritional yeast flakes (Note: I have purchased this 2 pack from Amazon before for less than $10. Not sure why the price increase).
  3. 1 tsp cumin
  4. 1 tbsp garlic powder
  5. 1 tbsp onion powder
  6. 1 tsp smoked paprika
  7. 1.5 tsp sage (I used thyme because I didn't have sage. Still good.)
  8. 1.5 cups vegetable broth
  9. 1/2 cups water
  10. 1/4 cup ketchup
  11. 2 tbsps soy sauce
  12. 2 tbsps olive oil (there are oil substitutes out there if avoiding oil. I think applesauce or mashed bananas will do it.)

    Instructions:

  13. Preheat oven to 325 degrees Fahrenheit
  14. Mix all dry ingredients in a bowl with a fork. In a separate second bowl, combine wet ingredients and mix well. (I recommend using a large mixing bowl for the dry ingredients).
  15. Slowly add the wet mix to the dry mix, stirring to combine into a dough. Turn dough out onto the counter and knead for several minutes.
  16. Shape dough into a tube and wrap in aluminum foil. Bake for 90 minutes directly on the oven rack, turning once halfway through baking. Let cool and enjoy! (While reading this, I just realized I never turned mine over. Oops. Still turned out awesome).

    Note: This yields ~184 grams of protein. I quartered the loaf and served myself portions of 46g protein. Also, I have tried to make seitan in the past, maybe 4 times, by boiling it and then frying it. It would always turn out way too tough and I never enjoyed it. This recipe might seem like too much liquid at first, but it is the perfect amount for tender, juicy seitan. I will be using this one for a long time.

Not all almond flours are created equal. Most of the stuff that's easiest to find is pretty coarse and won't act as nicely as finer grinds.

This stuff isn't cheap, but it's very fine and you might find that it works better than coarser flours. There are other fine grinds available, but they all seem to actually say it on the packaging.

Edit: To answer your actual question, no, I've never sifted almond or coconut flour.

Not sure if you guys have Amazon there, but you can also search for 'wheat gluten'. That's the powder form of seitan (pre-seitan if you will). It's much cheaper but you have to use it to make the seitan yourself.

1 tsp vanilla
2 tbsp almond butter

[BLEND IN FOOD PROCESSOR]

It's been a few years but I think this may be where I adopted the recipe from. I don't remember how or why I ended up with the quantities, but they work great! I use Trader Joe's almond meal, that's the good stuff right there, and Barney Butter, that's my kryptonite, makes me weak in the knees.

Sometimes I'll add in raisins, just fold into the mix after everything else. I tell myself every time I won't eat the whole batch in one sitting. So I end up grabbing half, eating them, then getting up again and grabbing the second half. Two, two sittings!

Poor undergrad student here. To be kind to my wallet I buy a lot of beans rice and potatoes. Black beans are really good for protein. If I need extra protein I take vital wheat gluten and make seitan. There are tons of different ways to prepare this for different tastes and textures (one of my favorite recipes) and It will last a long time for what you spend on it. Also some nutritional yeast will get you that B12 without having to take any supplements as well as give you a ton of other vitamins and nutrients and it too will last a long time for what you are spending. Other than that try to buy fruits and veggies without breaking your budget and try to keep it varied. Good luck!

Honestly, if you have the time to do it, a proper Tea can be really nice. The taste can be delicious, like an acidic sweet slightly more bitter green tea. I used to toss and wash (w/ water or herbal tea), but my digestive tract doesn't agree with doing that often, strained tea is much gentler on my GI and I know I'm not alone.

Quite a few of the Bob's Red Mill products are cheaper on Amazon than in stores. I get the TVP a couple times a year.
I'm not a vegetarian or anything, as a working parent TVP makes dinner faster/easier! Add a little water and seasoning and you won't be able to tell it apart from ground hamburger. I can make spaghetti with "meat" sauce, chili, tacos, sloppy joes, or hamburger helper in 10 minutes. AMAZING, I love that stuff!

I've been very happy with the Anthony's Coconut Flour from Amazon. Four pounds for $10.99.

Coconut flour is cheaper by the pound, plus you only need to use a third as much because it's so absorbent. I prefer the taste and texture of the coconut flour, but I know some people can't stand it for those same reasons. Recipes I use.

Although more expensive, I do use the Isopure Zero Carb protein powders as a flour as well, because it's lower in carbs and far lower in calories. Recipes I use.

I don't use all that much of either. My protein powders and that bag of coconut flour were both bought in the first half of last year and should last me through the end of this year.

Oh, vegetarian food that’s rich in amino acids can be much cheaper than resorting to buying Quorn!

Buy dry pulses in bulk, they’re dirt cheap, very versatile, and they don’t spoil. Lentils, beans, peas, and chickpeas. Brown rice, wild rice, and whole wheat flour are also very cheap when bought in bulk.

They’re usually cheapest at Asian markets, but you can also get them at wholesalers (like US Foods, Sam’s Club, and Costco) or even online for delivery.

I would also recommend the following soy based products:

Nutrela soy chunks (the brand most people in India use) - 2.64 lb for $25. (That’s enough for 20 dinners) They’re soft, chewy, and juicy. You can use them in dishes that would usually call for chicken breast. Great in a curry, with sides of green peas and rice.

Or you can ground up almonds or any nuts really (if you don’t have an allergy) and pulse them almost to a flour. It should be really fine and then you can add it to all your jelly’s or shower gels!

And the almond powder doesn’t disintegrate in hot water like a salt scrub does so you have more scrubby time!!

I sort of agree with you but how do you feel about insects, for example? If you found a few mosquitos or cockroaches in your bedroom, would you handle the situation the same way as if you found a squirrel instead? Or how about this: people need protein to live and many don't have easy access to cheap plant-based protein. Going vegetarian can be an excellent choice, it considerably improves the sustainability of your lifestyle and doesn’t mean food can’t be delicious or cheap. Also, meat is often high in fat and salt content as well as being very calorie dense if you’re trying to cut back.

If you want to go the meat substitute route homemade seitan is inexpensive (wheat gluten is [~$15/4 pounds](Vital Wheat Gluten by Anthony's (4 Pounds), High in Protein (4lb) https://www.amazon.com/dp/B00PB8U7Y0/ref=cm_sw_r_cp_api_i_gDvdBbNC4M863), or ~$.50-$1 per serving) and has the nutrition profile of a workout supplement with the caveat of not being a complete amino acid source on it’s own. I like to follow this recipe which is easy to make and all the spices including nutritional yeast can be changed as pleased. I have a batch in the slow cooker right now made with onion and coriander seeds.

Other options are things like burrito bowls, they can be made using black beans and optionally seitan along with peppers, onions, corn and other veggies sautéed and seasoned with chipotle powder.

Lots of Asian inspired food can be made using tofu, 1 block of tofu is ~$1-1.30 and makes two heafty meals. It can be sautéed with veggies and stir fry sauce and served over brown rice or noodles.

Another option for cooking is frozen shelled edamame, I like to sautée it with frozen butternut squash, spinach, and a spoonful better than bullion vegetable stock and then mix it with noodles like farfalle. (Note this meal is on the cheap side but not so much the healthy side if you eat a lot of noodles like I do)

A great option for on-the-go or cold meals is homemade hummus this is another one where you can change it to your mood that day, with things like removing the garlic or adding roasted red pepper or kalametra olives. It can be eaten with chips or crackers, or I like to spread it on two pieces of whole wheat bread, make a sandwich with spinach in the middle and throw it on the panini press. (Note this meal is a little less cheap)

Beyond that there is many other choices, this week I’m making stuffed peppers (with seitan) and penne á la vodka, I’ve also been eating walnut, pecan spinach salad with dog and walnut balsamic dressing. If you’re interested in more I’m sure I could write out some of those recipes or provide other tips or suggestions.

As mentioned in another comment, partial vegetarian is often called flexetarian, but the less you eat a food the less you desire long-term it so don’t be afraid to jump in and try going all the way.

I personally do not have the time nor the patience to blanch my own almonds. It requires that you take the skin off of each individual almond... that, I think, is insanity.

However, if you buy blanched almond slivers, and have the right kind of food processor or blender, you literally just dump and grind until you get enough flour.

So really it's just up to you and how much work you want to do.

I order mine on Amazon and I get Anthony's blanched almond flour.

I can justify the cost because I usually just use 3 tbsp at a time for "bread", or the occasional pizza which is only 85 grams. So a 2 lbs bag lasts a couple months.

Last year I moved from a vegan-friendly city to the sticks, so I've been experimenting with alternatives to vegan prepackaged protein. I've been playing around with lots of seitan recipes and ended up combining the best ingredients from several. A friend, who is a meat-and-potatoes kind of guy minus the potatoes, said it was "all right", which is huge. Also, the cost is less than half compared to frozen chicken.

2/3 Cup Vegan Veggie Broth (Better than Bouillon works great)


1/8 Cup Tahini


1/2 Tbsp Smoked Paprika


1 Tbsp Vegan Teriyaki Sauce (I used Wegman's brand)


1 Tbsp Vegan Kansis Style BBQ Sauce (Wegman's brand)


1/2 tsp Black Pepper


2 Cloves Pressed Garlic




Knead for three minutes, rest for 5, then knead for 10. Form into 1 inch thick logs, cover the logs in more BBQ Sauce. Wrap the logs tightly in aluminum foil. Place on a baking sheet into the heated oven for one hour. Flip logs occasionally to make a nice crispy crust.

I've managed to make "keto poptarts" - no recipe, just eyeballed it. You will need to drop some initial cash on the almond flour - it'll last a while and is used in a lot of recipes (meatloaf, pancakes, etc.)

Recipe (you'll need to fine tune this - taste it as you go)
Crust - 1/2 cup Almond Flour, 1 Egg, Butter, Salt, Sweetner- spread onto bottom of greased pan.

Filling - Cream Cheese, Egg, Sugar Free Maple Syrup (doesnt take much), Sweetner

Top with cinnamon, bake for 10 minutes ~350F, chill in freezer/fridge.

Lasts at least a week in the fridge. Could probably up the crunch through pan frying the finished product.

I'm going to experiment with different fillings in place of maple syrup (cocoa powder, low sugar/low carb fruit spreads, etc.) I wouldn't eat these every day, might cause a stall but they're great run and go breakfast and fairly low cost.


Don't have a real answer on the meat side of things - I've had luck finding cheap beef cuts (miniature round steaks) - season the shit out of them and cook then in a pan with butter. Add egg, breakfast done.

You’ll really thank me for that haha. I do 4 of those and fill them with like 3 grams each. It does take a few times to get used to it and you’ll struggle at first, but I’m a pro at it now. You basically just have to roll them up into a little balloon and twist the top, dip them in water then quickly put them in the back of your throat and wash it down. I barely taste a thing and it’s infinitely better than any other Kratom delivery mechanism. I got this idea from the Kratom sub and it’s a game changer!

I switched to these edible films. Don't taste anything at all, and it's the same exact affect you get from TNW.

You can essentially make a batch like you would do with caps and just pop a little edible balloon anywhere with a bottle of water. When you're on the go or lazy, you don't have to worry about measuring, making a mess, getting a cup to toss the kratom in your mouth, bad taste, etc.

I use to do TNW for a few months, but it obviously tastes disgusting and leaves a lingering taste, sometimes you gag when you toss it into your mouth, etc. Switched to the edible films and will never go back to that disgusting shit. Don't get why people torture themselves with that gross shit when this is 100x better with no downsides.

I make the dankest 1000 cal shake imaginable. Follow these steps:

  1. Get a 8 pound tub o' whole oats powder from Amazon
  2. Get a 2 pack of 28oz Blender Bottles from Amazon

    Recipe/Instructions:

  • Put some blended mixed frozen fruit in the bottle (blend the frozen fruit in a blender in bulk with water - keep refrigerated for further use throughout the week)
  • Pour a little milk in
  • Put 1.5 to 2 scoops of vanilla protein powder in
  • Pour a little milk in
  • Put 1 scoop of the oat powder in
  • Pour a little milk in
  • Put 2.5 generous spoonfuls of vanilla or plain greek yogurt in
  • Put 5 tablespoons of peanut butter POWDER in
  • Pour enough milk to reach near the top of the bottle

    Close it up, secure it, and shake - enjoy the dankness - super smooth consistency - EZ

    Also, you'll notice - my ingredients are very similar to yours but the key difference is POWDERED whole oats, POWDERED PB, and BLENDED (w/ water) fruit.

You can do it! And when you get even 1/4 of the way there, you'll feel like a different, healthier, more mobile person. It's amazing.

Enough motivational drivel. To your question, I'd first advise to not worry about cravings until you're through keto flu. It's hard enough to not eat carbs. Don't make it harder by trying to starve yourself as well. EAT. ENJOY SO MUCH BACON. This will not last long and will most likely reduce your lifespan less in this time than being overweight long-term will.

You will also probably have cheat days. Don't judge yourself for them. It was actually kind of eye-opening to go back and forth a bit and feel the difference in my health very tangibly.

My fave foods that I used in the beginning (and a few subsequent falls from grace) were:

Drinks:

I try to drink lots of water. Water gets really boring. Unfortunately, most of the sugar-ish drinks you find have artificial sweeteners in them. I know that these sweeteners aren't great, but I don't think they're as terrible as some folks believe. I drink them anyway, but I try to minimize my intake.

  • SodaStream - This bastard is indispensible for me. I use it all the time, but I love drinking plain seltzer. You can also add...

  • Sugar Free Syrup or Sugar Free Lemonade - When I do get a bad craving for a sweet drink, these are my favorites. You can add the lemonade powder to regular water. The soda...not so much.

  • Coke Zero - Again, I try to limit these, but they're a solid replacement for Coke.

  • Coffee & Tea - It's coffee tea. By this point in your life, you probably know if it's your thing or not, so if you like it, drink a lot more now. Just use heavy whipping cream or half and half as a creamer, as milk has a lot of sugar. Adding stevia is...okay. I usually just drink it black.

    Meals & Snacks:

  • FatHead Crackers/Nachos - Crikey these are good. I would eat these when not on keto. They're good alone, dipped in salsa, baked with nacho toppings (shredded chicken, black olives, guacamole). Top them with pepperoni and cheese to make little mini pizza-crackers. Or you could have...

  • FatHead Pizza - This is also worthy of a crikey. The crust doesn't taste exactly like bread per se, but it's fantastic. Top however you would a pizza. Make your own sauce, as a lot of the store bought brands have too much sugar.

  • Pizza Sauce - This is a simple sauce that tastes pretty good. It's fairly easy to modify ratios and tweak ingredients to match your tastes.

  • Low Carb Tortillas - I generally can't taste the difference because mine are filled with delicious taco fixins.

  • Cookies - Cookies. Nuff said.

  • Pork rind crusted chicken nuggets - These are legit. I was doubtful of the breading, but I was pleased in the end.

  • Weird, not-ramen replacement - I love ramen almost as much as I love my children. To replace it, I make this abomination. I don't really measure, but I'll give rough estimates. Also, please don't judge me.

    • Asparagus stir fry - An entire bag is 10.5 carbs. I usually eat half.
    • 2 eggs
    • 2T Peanut butter
    • 1T Soy sauce
    • 1 - 2T Heavy whipping cream (or more to achieve desired consistency or nutrient content)
    • 1/2 - 1t chicken bouillon
    • 1/4t - 1/2t Onion Powder - I'm guessing wildly at this amount. I just shake it a few times
    • 1/4t - 1/2t Garlic powder - Same as above
    • A few shakes of Fish sauce

  1. Add frozen veggies to water and turn on stove, set eggs aside.

  2. Mix remaining ingredients in a bowl

  3. When water boils, add eggs and poach to desired consistency (boiling for 3 min gets you soft-medium boiled consistency)

  4. Carefully drain the water from the pan without busting the eggs. You don't have to get all of the water, as it can add

  5. Pour veggies and eggs into the bowl and mix with the sauce.

    Misc:

  • Bob's Red Mill - God bless Bob. He should be a patron saint of keto. He has all the flours. See below.

  • Bob's almond flour, Bob's coconut flour. This is basically all you need. No Hindu crickets required. You can get fancy later when you're feeling better and want to branch out.

  • Pork rinds - They're weird and taste like I imagine a football would, or...a piece of rawhide. But I use these for breading sometimes (they're surprisingly good when soaked in delicious avocado or coconut oil). I also occasionally eat these to make my craving for chips, or rather, entire appetite go away.

  • Avocado - The best fruit/berry ever. They're good by themselves. You can also make delicious ice cream with them. And of course, there's guacamole for the FatHead Crackers/Nachos above.

I just bought gluten powder from Amazon and it seems very cheap if you go the route of cooking it. I used this recipe because it was the most simple and also I wanted to use a slow cooker to be lazy, figuring if it would take time at least that is time I didn't have to be paying attention to it.

First batch came out pretty fantastic and that was with not really measuring anything well. When you compare the cost its super cheap to make yourself.

Yo you tried to snort it!? I commend your effort but that's a huge waste of time and god knows what it did to your nose. Not trying to be rude, but don't do that again man, yikes.


Have you thought of parachuting it? Amazon sells these little edible papers you can wrap your dose up in and swallow in one shot, no taste at all. People use them for Kratom a lot.



I forget what they're called, but if you're interested, I'll look them up for you. I'm on mobile rn or I'd just link to them.


Also, if you're trying to taper down, I've heard anecdotal reports of people cutting their large doses in half with minimal withdrawals. Kratom also helps with the withdrawal while tapering when taken on a as needed basis (you can get addicted to it too, so there's that).

These oblate discs are the best. They completely dissolve. don't try to do more than 2g per disc, or you risk it getting stuck in your throat. If that happens, you chug water until you get it to dissolve, or you run out of breath and cough it out.

Muuuccchh easier than doing a toss and wash, IMO.

Faster onset and a slight increase or change in effects BUT I have found the effects wear off quicker. The capsules take longer to feel but if your using kratom for energy or pain relief the slower drip of energy might actually be more desirable. The quality of effects from your kratom drink will also depend on whether or not you make a tea and strain it or drink the powder. I have found straining to hurt the effects slightly. I have gotten into oblate discs recently.

Some quick thoughts:

  • It gets easier, by week 5 or 6 you'll probably stop craving the taste of meat.

  • Taking a supplement isn't a bad idea, it'll ensure you get all the proper vitamins and minerals.

  • TVP is cheap, filling, nutritious and delicious.

  • Don't expect to eat a lot of the fake meats, they're super expensive and not that good for you.

  • Learn to make hummus: Blend together: chickpeas, tahini, lemon juice, garlic, hot-sauce, salt, pepper, etc.

  • Don't take crap from people that want to harass you for your vegetarianism. Stand up for yourself.

  • Remember the difference between advocacy and preachy-ness. Be kind, firm, and non-judgmental.

Pumpkin Chocolate Chip Cookies

  1. Cover 2 medium baking sheets (or 1 medium/1 small) with parchment paper and preheat your oven to 350 F (or if using a convection oven, preheat to 325 F).
  2. Next, prepare the ground flax seed. I prefer to start with whole flax seeds. To begin, grind 1 tablespoon of whole flax seeds using a coffee grinder. Then add the ground flax seed to a small bowl. Add 3 tablespoons of water, stir and let sit for about 5 minutes until thickened. 
  3. Meanwhile, in a medium bowl, combine the gluten-free flour mix, almond flour, baking soda and salt. Stir with a large spoon until combined.
  4. To a large bowl, add the canned pumpkin, coconut oil, white sugar, coconut sugar, pumpkin pie spice, and vanilla. Stir, then add the flour mixture and stir until combined. Fold in the chocolate chips until evenly combined. 
  5. Cover the bowl loosely with a towel and place in the fridge to cool for at least 30 minutes. Remove from the fridge and using a cookie scoop (or a small spoon and your hands,) scoop out roughly 1 1/2 tablespoons of the cookie dough and place on the parchment paper, spaced out between them (they won’t spread much so you only need about an inch or two between each cookie.) Continue to drop all cookie dough, about 21-22 cookies between the 2 cookie sheets. Press down a bit on each cookie with a small fork to flatten (about halfway).
  6. Bake at 350 F for 14-15 minutes, or until the edges and bottoms are browned (the center will still be a little soft). Remove from the oven and let cool at least 15 minutes; they will firm up as they cool. Makes about 22 cookies.
  7. Store in an airtight container for 4-5 days in the fridge, or freeze up to one month.

I'm in the same boat. I just moved to Hawaii and I swear, no one diets here at all. And they eat rice with everything. I'm afraid to say the word "low carb" around these people :)

So I have recently bought on amazon a bunch of things I USED to be able to find my local grocery stores, such as:

    I bought them in bulk and they're all going into the freezer.

    And I've always bought EZSweets on Amazon, I've never found it in stores anywhere.

Here's Mary's Test Kitchen's seitan playlist (the playlist is ordered by date so the videos towards the end are probably better)

Making seitan from flour isn't a great idea, it's kinda time consuming, IIRC about the same price since you throw away part of the flour in the process (keeping only the gluten), you're better off getting "vital wheat gluten" from amazon

What I do is that I always have a batch of seitan in the freezer and I take from that when I need some, and make some more (of a different kind) when I'm almost out of it

I buy from the company Gaia Ethnobotanicals. I personally don't notice much of a difference between the different kinds of blends/strains (red, green, white), but most people do. Reds are considered to be the most helpful for pain and most sedative, while greens and whites produce a more energetic effect.

My personal favorites from Gaia are Bali Gold and Purple 8-in-1 (highly rated for pain). I would recommend trying any of their reds or the two above for pain. If I were you, I would buy their welcome sampler so that you can try 5 different kinds. They often post discount codes on r/kratom and as a first time buyer you get a discount. I don't work for them despite this sounding like an ad, I just really trust them.

I take around 2.5 grams each weekday on an empty stomach - this is very important. Food can disrupt the effects. I eat a light meal about 30-45 minutes after I take kratom via oblate discs. Interestingly, sometimes I don't even notice the effects until mid-meal or even after. I swallow the powder in the oblate discs with lemon water, followed by a cup of ginger and lemon tea. Lemon potentiates the effects and is also good for all around health, while ginger settles your stomach. Kratom can be hard on some peoples' stomachs, so I highly recommend ginger. Like opiates, it can make you a bit constipated. TMI, but I'll always be honest!

Absolutely do not drink alcohol with kratom. It increases chances of nausea/vomiting and even if it's one drink, you'll be left with a hangover because kratom can dehydrate you. That's why it's important to make sure you're hydrated!

I can answer any more questions! I really support the use of this plant for pain relief. I'm not sure if you're a man or a woman, but kratom is also extremely useful for menstrual pain and/or endometriosis pains

Yeah, sure! I just heard about them by word of mouth, and found them on amazon. It is basically making a little “taco” or “pouch” and dipping it gingerly in water, then swallowing immediately. I have had instances where I filled it too much or didn’t wrap it well and it broke in my mouth so I choked on the powder while trying to swallow, but I’ve pretty well gotten the hang of it now. They were cheaper when I bought them (about 3 or so dollars less), but there are 200 discs in each little package. I just now have gotten through half of them since my order in October. Hope this helps!

Try oblate discs. They're better than capsules because they dissolve fully and much quicker. You wrap your kratom dose in one, dip the part holding the kratom in water (don't get water on the part you're holding or it will fall apart), and then swallow it with water. Works like a charm!

IMO the best thing for anxiety would be a red Kratom (I respond better to greens so I'd do some experimenting), but with ashwaganda and l-theanine as well. I'll do 1.5-2.5 grams of kratom, 1 gram of ashwaganda if it's really bad .5 if it's not and then .5 of l-theanine. One of my favorite cooking items is TVP and TVP chunks. They don't taste like anything on their own, they take on the flavor of what they're cooked in. The granules are really good substitute for ground beef in taco filling, gravy, hamburger helper type recipes, anything. The chunks make a really good chicken substitute. Reconstitute some and add it to a crock pot of ranch dressing, buffalo wing sauce, and cream cheese and eat with Fritos. Holy shit it's good.

Also, of course, there's all kinds of beans, nuts, dairy if she eats that, eggs if she eats that, those sorts of things.

Iron is sometimes difficult for vegetarians too, one quick fix for that is to cook in cast iron, which increases iron content by a crazy amount.

Since I went vegetarian, my cholesterol dropped from 213 to 163 without any other changes in my diet or lifestyle. I don't get sick any more, I'm not deficient in any nutrient, I feel fantastic.

In saucy or stew-y dishes, I like to use textured vegetable protein. To prepare, I put it in a microwave-safe bowl, pour in about a 1:1 ratio of stock (with a little more stock than TVP), cover with plastic wrap and microwave. I think the microwave time is on the package. Could easily be done with water or vegetable stock for lent.

I then use it like I would ground beef or pork. The texture is wonderful, but also distinguishable from real meat. I wouldn't put it in an enchilada by itself though; try mixing it with some sauteed veggies like zucchini, onions, mushroom etc. and then stuff the tortilla.

I use it a lot in chili and vegitarian spring rolls.

Low-Carb Dutch Baby
Servings: 2

3 large eggs, left at room temp for 30 min
1 1/2 tbsp granulated swerve (erythritol)
1 1/2 tbsp granulated splenda
1/2 tsp cinnamon
1/2 tsp kosher salt

2/3 cup carbalose flour
2/3 cup low-carb milk, at room temp
3 tbsp unsalted butter, cut into 3 pieces

Place a 12 inch cast-iron skillet in oven on middle rack and preheat to 400°F.

Combine the carbalose, sweeteners, cinnamon, and salt in a medium bowl and stir until thoroughly mixed. Set side

In a large bowl, beat the eggs thoroughly. Whisk in the milk and vanilla extract. Finally, whisk in the carbalose mixture and beat until the batter is smooth. Let batter rest for 5 minutes.

Remove the preheated skillet from the oven, put the butter in the skillet and swirl to coat until the butter is melted. Dump the batter into the greased skillet and bake in the oven until golden and the edges are browned and crisp, about 20 minutes. Slice into wedges and serve with fresh lemon, low-carb maple syrup, or sugar-free/low-sugar preserves.

This is not going to rise as high as a normal dutch baby, but the flavor is pretty great.

This could really be 4 servings if you are having it as a side at breakfast, which would make it 5g net per serving, but it's probably 2 servings if this the main part of the meal.

So, par cook the veggies. I do this with my meats and veggies. I cook the portion I intend to eat that night longer than the portion I intend to eat later. It makes it much better in flavor and texture than cooking it completely and reheating it.

The other thing you can do is explore new veggies/new ways to prepare them. You can try riced cauliflower or riced broccoli. My personal favorite is mashed cauliflower. I add some goat cheese to it as well. Yum. I also own a spirlaizer that I use to make zucchini noodles. Try making zucchini fries. I use almond flour instead of bread crumbs (if you have a trader joes nearby it's much cheaper in store). You can also do it with eggplant.

I used to do that as well, until I discovered powdered oats. In my experience, for smoothies in particular the powdered oats mix really well and don't make the shake so starchy. They are more convenient too since you just scoop it from the barrel and don't have to cook anything. You have to pay for the convenience obviously, but you can get an 8 pound barrel for $30; MuscleFeast is one I'd highly recommend!

Made my first pie this weekend. Per /u/jaaypeee very simple recipe seen below. Not the prettiest pizza, but it tasted great! I'm glad it came out a little Frankenstein-ish because it leaves plenty of room for improvements! Next time I'm making a sauce, hit me up with any simple recommendations!

I bought this flour and yeast. Baked at 550F in a cast iron that I sealed with bacon grease the night before. I couldn't believe nothing stuck! It was an AWESOME experience and I already ordered a baking steel and plan to make more pies at my girlfriend's parents place this coming weekend. A special thanks to /u/jaaypeee for the post and tips!

>I used the 48-72 Hour NY Pizza Dough recipe from the book The Elements of Pizza by Ken Forkish. This was the second time using a baking steel. I heated the oven to 550 degrees fahrenheit and let the steel come to temp for about 45 mins. The pizzas took 5-6 mins to bake.

Ingredients

  • Ingredient Measurment %

  • Flour 500g 100%

  • Water 320g 64%

  • Salt 14g 2.8%

  • Yeast 1.2g 0.3%

    Method

  • Measure and combine ingredients. Water temp between 90-95 degrees fahrenheit.

  • Mix the dough by hand. Target temp of 78-80 degrees fahrenheit.

  • Knead the dough and let rise for two hours in a lightly oiled tub.

  • Divide and shape the dough.

  • Let the dough balls ferment in the fridge for 48-72 hours. (I let the dough ferment for ~60 hours)

  • Take the dough balls out of the fridge 60-90 mins before baking.

  • Make pizza :)

In that case, wash your hands and knead again.
    NOTES:a) It's very important for the dough to be completely uniform before proceeding to the next step. You shouldn't have pieces of cheese separate from areas of almond flour.
    b) If you want to use a food processor or stand mixer, or if you have trouble with sticky dough, please check the tips in the post above!
  5. Divide the dough into 6 parts. Form/roll a long log with each part, then press the ends together to make a bagel shape on the lined baking sheet. Repeat with the remaining dough. If using sesame seeds, sprinkle them over the bagels and gently press into the dough. (You can also use everything seasoning for everything bagels.)
  6. Bake for 10-14 minutes, until the bagels are firm and golden.

You don't have to eat plain to save money. Just make your own food. Making your own meat substitutes is way cheaper.

This can of vital wheat gluten is $22 for 45 servings. This four pack of beans is $18 for 64 servings. This pack of tofu is $21 for 48 servings. That's 157 servings of protein for $61. Lentils are crazy cheap as are oats, whole grain pastas and breads. Flax seed is cheap (gives you your omega-3s and works as a binder in recipes). Nutritional yeast is sold pretty cheap in bulk sections in some grocery stores as well.

Frozen fruits and veggie are sometimes cheaper than the fresh stuff. I live in CA so I can get some pretty cheap fresh produce. A lot of vegan cooking involves some planning. For example I always keep cashews soaking in the fridge for when I may need a creamy or cheesy sauce.

I live in Arizona. I was able to get Bob's Red Mill almond "meal" (finely ground) at Fry's, it's almond flour, it's very finely ground without the almond "skin". It was pricey though, 1 lb for 10-11 bucks. It's not nearly as gritty as almond meal, which is mostly ground up almonds with the skin.

After using Bob's Red Mill i'm not sure I'd use anything else when making holy grail pizza...now I just need to make some almond flour pancakes.

I keep an eye on the prices because they have a tendency to fluxuate (I'm ambivalent to brands) and have been getting my wheat gluten on Amazon for much cheaper than the store. Also, you can use all whole wheat flour if you use some vital wheat gluten.

The whole wheat flour doesn't have as much protein (gluten) as bread flour so that is why some recipes try to get you to do this half recipe.

Vital wheat gluten is basically just adding the gluten in the whole wheat flour. It makes it light and fluffy instead of dense and chewy.

I bought a pack of this stuff from amazon and it makes all my breads a lot lighter.

OK, I found it. I was wrong: it's not a powder, it's a really thin film you can wrap powder in and down it without tasting the bitterness. It's called "oblate disks." Check out these. You can fit up to 3 grams in them, and they are super easy to swallow. You just put your kratom in the middle, fold it like a burrito, and then lightly dampen your finger and touch it on the folds to seal it. Then you swallow it with a drink. I guess it's an easier and safer way to parachute, but I don't how similar it is because I've never actually parachuted anything. They are cheap and you get 200 in a $6 pack. And they will save you a lot of time.

Also, I know you said your low on funds but if you can afford it then get some agmatine. You can get 100g for like $12 of Amazon. If you take between 1-2g a day it can help you cut your dose in half. It makes you doses last longer, too.

Ended up using 1 ply toilet paper and parachuting it (old drug habits came in handy, for once) and then I found these on Amazon and I'll never toss and wash again. TVP (Textured Vegetable Protein) = 80kCal with 12g of protein. Significantly more protein per calorie than chicken, it's cheaper, and it's shelf stable.

Once I hydrate it, (usually in veggie broth, because I don't eat meat, but you could use beef broth) I use it just like cooked ground beef. It makes fantastic tacos, BBQ sandwiches, salad topper, etc.

Have you considered using tvp instead of tofu? Even full carnivores usually like tvp, as it has a similar texture to meat and it soaks up the flavor of whatever you cook it in.

You can probably find it in a decent grocery store. You would basically take whatever taco seasonings you're using, add water, and then add the tvp and simmer until it's fully hydrated. The tvp will soak up the water and the flavor of the seasonings. Then use it exactly as you would beef in the recipe.

It's super good, I've used it in vegetarian chili and not told people it was full veg. They never noticed!

If you don't want to use soy protein powder (Winco sells it pretty cheap), then I suggest some textured vegetable protein. If you have ever had chicken cup of noodles or other types of instant ramen, it's the "meat" in those. Textured vegetable protein is a left over product from soy products manufacturing, so it is pure soy protein. By itself, it is tasteless but the beauty is that it takes on the flavor of ANY liquid you put it in (to rehydrate it). I've mixed it into burgers and meatloaf before and you would never know it is there. Again, Winco near me sells it pretty cheaply but you can get it online too. I keep a bag on hand and usually just throw a small scoop into what ever I am making. It will bulk up a bit as it absorbs any moisture, so I suggest starting out with a small amount until you get used to it.

Peanut Flour! This is the stuff I use, I like the taste. Sometimes I think PB2, or PBFit, or whatever the new versions of those are, don't *quite* get the PB flavor, but it seems like the peanut flour is a stronger taste.

There are other kinds of protein powders besides whey, such as pea protein powder. I personally like to use peanut flour, which has 16g protein per 30g scoop (110 calories) and tastes soooo much better than most artificially sweetened powders. This one is my favorite

Stuff labeled as "peanut butter powder" such as this are generally pretty expensive. I try to look for "peanut flour" like this. They are the same thing just the flour doesn't have salt or sugar and isnt labeled as a specialty product, it's just a flour replacement. Both can be reconstituted with milk or water to make peanut butter and be added to smoothies and baked goods.

Tacking onto this, if you are like most people and only want to drink protein shakes cold, you could invest in a Thermos bottle like this which should keep the shake cold through most of the day. Make your own gainer shake using things like protein powder, bananas, peanut butter, and oat powder. Or if you're lazy you can buy a gainer powder mix which is easy calories, but those are usually less nutritionally dense and the taste might not be as good.

I'm getting ready to start my 4th week (Started August 22nd) and I'm not sure if I'm losing weight. I don't own a scale, so I'll have to go to the college gym to weigh myself. Started at M 5'9 23 310 (actually 335, but I started this diet at 310). I feel bloated some days, but I get kind of discouraged when I see people say "I lost 200lbs in 5 days of keto" and I just wonder is it going to happen to me? What am I doing wrong?

Most days, I eat lunch meat (deli sliced turkey and chicken), salads, omelettes with spinach, and pickles. I ate a few of those Atkins frozen meals and while expensive, are the best things I've eaten on the diet. I'm thinking about just going to them for a week. I'm allergic to nuts, so almond flour and milk are no dice.

I've started going to the gym three times a week with my roommate. I'm so jealous of him, he's a former athlete M 21 6'2, 185. He has a weekly cheat day, and he convinced me to go with him last night to get it. He gave me two Cajun fries and I savored those babies, but I didn't order anything. He's of the nutrition mindset and kind of hopped onto me about eating cream cheese. I told him to look up keto, and he just kind of brushed it off. He's of the low-fat, "Good" carbs mindset, the diet that failed me so many times. I really like him, we've only lived together since I've been on the diet, but I wish he understood that I'm climbing a mountain he's never had to before (losing over 100lbs).

I broke, and ate a pint of that halo top Icecream when I saw it posted on here within 24 hours. I loved sweet things before, and I can't buy it again for awhile, or I'll dive in when I'm watching tv at 11 o'clock at night.

I don't know if anyone will read it, but I just needed to vent. I hope this is all worth it man, because I loved carbs. Pizza, tacos, brownies, all that stuff. But I'm getting ready to get my masters degree, I'm in life for the long haul. I want a family, and the only way to get a girlfriend, to get a good job, and be able to live life the way I used to is to lose this weight (Or at least it makes it infinitely easier). Ingredients

1 cup almond flour
¼ cup coconut flour
1 tbsp baking powder
2 tbsp granulated erythritol
¼ tsp salt
5 large eggs
¼ cup butter, melted
¼ cup heavy cream
3 tbsp water
butter for greasing pan

Instructions

  1. In a large mixing bowl, sift together dry ingredients.
  2. In a second mixing bowl, beat eggs together with butter, cream, and water.
  3. Mix wet ingredients into dry ingredients until all lumps are dissolved.
  4. Heat a skillet over medium heat. Grease with butter.
  5. Scoop batter onto skillet in desired size. Flip when edges begin to brown.
  6. Remove pancakes from pan and serve!

  • 100 g Butter melted (100 g / 1/2 cup)
  • 30 g Coconut Oil (30 g / 2 Tbsp)

They work well! About 20 days since innoculation and im like 90% colonized. Granted ive been using a seed germination pad to keep the temp up. Downside is there is only one injection port so its colonizing from one side so it probs takes longer. So to compensate i injected like 3 ccs per jar instead of the usual 2. Probs could have done 2 ccs fine. Plus 6 bucks is cheap. I ised a spore syringe i bought from a reputable supplier

One brf cake could produce 3-4 flushes! Plus you could even break it up and put it in new substrate like coco fibers.

Species wise, id say just stay away from P. cyanensis cause it grows mainly on wood and is hard to get to fruit from what i read. Im currently using golden teachers (P. cubensis) for my first grow.

Most peoples problems seem to come from contams during innoculation. The port makes it super easy to not have contamination in my opinion. First grow ive done and i had 0 contam. Molds love to grow in the substrate so if its off white or other colors and grows like super fast 2-3 days for full colonization, its probs contaminated. Just use an alcohol pad to wash the port, i grabbed sterilized surgical gloves and a sterile hypodermic needle (without a filter) from my job so that might have helped. I didnt even flame my needle, though people recommend flaming the needle

My standard is to pressure cook it, like in this recipe (just the seitan part, not the finishing portion to make them into wings).

A lot of people like baking their seitan. I like this recipe for baked seitan (I only make the stuffing for fancy holiday roasts, but I've made it without the stuffing for a quick seitan fix).

Another common method is simmering the seitan, but I suck at making seitan this way, so no good suggestions here.

It sounds like your looking for seitan. It has up to 20g of protein per 100 Cal. The theoretical maximum for any food is 25g per 100 Cal. You can just substitute seitan any time you would eat chicken. It even has a similar texture. [It's incredibly easy to make][seitan], and you can make it in bulk. It doesn't have all of the essential amino acids, but as long as you eat some other sources of protein, you'll get enough of all the essential amino acids. [Wheat gluten is incredibly inexpensive][gluten].

Another inexpensive source of protein you might be interested in is TVP, which is good in chili, pasta, and "meatloaf", among other dishes. You can also get larger chunks which are good in soup or stir fry. TVP has about 14g of protein per 100 Cal, all the essential amino acids, and is also incredibly inexpensive.

You can find TVP and Wheat gluten at many grocery stores, but they'll be a little less expensive if you buy them in bulk online.
