I've done it. But you're going to need something bigger than one of those tiny cooking torches. I picked up one of these professional torches and some butane fuel to go with it.

Using a real culinary torch instead of a poor, tiny substitute makes a world of difference when searing a steak too.

I use the Lloyds Detroit pan. Amazon also has pre seasoned pans from Detroit Pizza Company for about $10 less, however I cannot attest to the quality. The Lloyds pan is recommended on pizza.com

Hello Beautiful Bombshells!

I see 1987 Members...not quite 2k as of yet. That was a good year :) The year I graduated high school and made the decision to move from Indiana to Florida.

I woke up bright eyed and bushy tailed at 5 am after hitting the sack at 9 pm and not waking up a single time during the night. Yahoooooooo! Thank you so much to all who responded to my frustration with explaining why I'm not starving myself to my husband. I sent him a long email explaining what was happening with my body and articles to back things up (thanks u/BRC_haus) that I was sent, as well as more that I found. I think he gets it now. Who knew it just took me explaining things? I guess we're never too old to learn over and over again that communication is the key :)

I also OMAD'ed yesterday. Dinner was Crockpot Mississippi Pot Roast with Cauliflower Mash and Roasted Delicata Squash (roasted with butter, sugar free maple syrup, thyme, salt & pepper). It was not a pretty plate (or picture). but man was it damn tasty. I actually ate the fat on the beef and enjoyed it. Normally I spit it out and give it to my dog :D I also had a SlimFast Fat Bomb Snack of the Peanut Butter Cup, as well as a Pumpkin Pie Fat Bomb. I made the recipe (I got 24 fat bombs even though the recipe yields 12 because I used a smaller silicon mold) and froze them. Hubby hasn't really been eating them, so they'll last me for awhile :)

Today is hair day! I need a touch up on the purple so bad. It's faded to lavender and I can't wait until it's dark purple again. I hope ya'll have a wonderful Thursday and KCKO! XOXOXO

I added bits o' brickle to the icing before placing the frogs on. Trying to make fetch Harry Potter holidays/Christmas happen and used Thanksgiving as an opportunity to start. My in-laws loved it, but it didn't turn out quite as I would have liked especially since I was pressed for time. [edit: I don't know how to format, guys]

I've read that you shouldn't store your dabs in silicone long term as it can leech into it or something. You could just store it in folded parchment paper or a [glass container]().

14mm, 18mm, and 10mm are all the standard joint sizes that you attach your accessories to (bowl, nail, etc.). You just gotta match up the numbers and the male joints with female joints. You said you wanted the fab egg, so your nail would need a male 14mm joint.

From there, you just need to figure out which nail you want. Hymanquartz has a few that I would recommend: 4mm, 3mm, and thermal p bangers. He also has carb caps for the first two (thermal p comes with one), some of which have dabbers as part of it. Some other vendors like volcanee have 25mm bangers as well.

Here are some more carb cap (1, 2, 3, 4) and dabber (1, 2) options.

I would suggest getting a reclaim catcher (1, 2, 3) or a dropdown (1, 2). Not really as necessary if you're getting the thermal p from what I've heard, but I still think it's good to have an extra piece of glass between your piece and your nail.

Oh, and you'll need a torch (1, 2) and butane, though I'm not quite sure which butane you should get.

I meant to include my instructions earlier but didn't have time. I started with just a regular cardboard box, the thickness I wanted the final piñata to be. Then traced a ninja outline on it, based on some cookie cutters we have, so it was familiar in shape. To be sure the front & back were identical, I cut the front out first, folded the sides in half, and traced directly on the back panel.


It was just cut out with scissors, but leaving the side panels whole. That allowed me to use masking tape to fold the side panels into the ninja outline I had cut out. Wherever there was a lengthy gap (like along the inside of the legs) I just cut another panel the same width (i.e.depth) as the rest of it and taped into place. I left one half of the head untaped so it could be filled. Btw, since we have some food allergic kids coming, it's mostly filled with dollar-store toys, stickers, and balls. The only candy is a few ring pops. :-)

I used one layer of papier mâché along the seams and all surfaces, so it could be easily painted (easy recipe! 1c. flour, 1c. water, 1tsp salt; dip strips of newspaper in & stick! Allow to dry thoroughly).



The hanger needed to be strong, so I clipped the bottom off a wire hanger, bent it into shape (same size as the depth of the piñata), then poked it through the top of the head, secured it with tape and ran a bead of glue down the length of each arm.

Once the papier mâché dried, I gave it a coat of black acrylic paint, glued on a few strips of crepe paper streamers just for that piñata effect, and painted on the eye slit, eyes, and hand. Oh, and the sword (my son's favorite part!) is just a paper towel tube, flattened, with a layer of aluminum foil glued to the surface!

TLDR: ninja is an old cardboard box, taped into shape with a single layer of papier mâché, then painted. Hung by a wire hanger.

I bought the Pizzacraft 14x14 steel and love it. Can't comment on differences in steel thickness. The idea of a steel is that it has very high thermal conductivity - it transfers heat FAST. So it doesn't necessarily need to hold onto heat, meaning thickness isn't that big a factor.

Anyway here's the bottom of one of my last pies.

Here's a profile view, so you can see the thickness of the browned layer

I use the steel on the very bottom rack and a pizza stone 2 notches above that.

  • Pan was this LloydPans 10x14 pan.
  • For the crust, I started with the recipe and method described in post 199 of this excellent thread. After ~3 hours of room temperature rise, I covered it with plastic and put it in the refrigerator for ~24 hour cold ferment. After the cold ferment, I let it rest at room temperature for ~90 minutes before baking.
  • Baking was @450F on a baking steel. I parbaked the crust without any toppings for maybe 5 minutes.
  • Cheese was a mix of cubed white cheddar, muenster, smoked mozzarella arranged on top of the par-baked crust, with special care to place cheese cubes around the edge to create that glorious brownness. Grated pecorino romano went on after the bake.
  • Sauce tomatoes, garlic, and pepper flakes that simmered while the dough was resting after the cold ferment and while the pizza baked. I sauced the pizza after baking; flavors are much brighter this way.

Put the one in the other and put whatever you're drying on the rack and put one on each rack in your oven. Set the oven to the lowest temp possible. Prop the door open with a wooden (not plastic) spoon and wait.

Ovens are usually a little hot for fruits to do well so you can go on for an hour, off for an hour, etc... Until it gets dry to keep from cooking as you dehydrate. Ovens work well for meats and jerkys as I feel most home model dehydrators don't get hot enough to dehydrate meat.

If you do something that's really sticky like pineapple or mango, put the slices on this in the sheet pan. You'll have to turn your pieces a few times but they'll make cleanup so much easier.

You should invest in some silicone ice trays or brownie bite moulds ;) Unless those ARE silicone ones in which case you are already all set. Wayyyy easier to get stuff out and transfer to a freezer bag or other container. I've used these ones for baby food (would work great for pesto):

Here's the quarter sheet pan, and here's the wire rack! Pro-tip: get two wire racks, and a half sheet pan (2x the size), and you've got two sheets pans with wire racks to fit either!

While they're a fantastic tool, a stand mixer is expensive. However, having a mixer on hand can be insanely useful. A decent handheld mixer can do the job for way less. Aside from that, these would be my suggestions.

1.) Knives. Get something decent and try to learn to keep them sharp. you don't need a huge knife block, 2 or 3 basics will do the trick. A small and large basic knife and a serrated knife will be plenty to start with. A set of basic cutting boards to go with these as well. Get more than one because you shouldn't cut raw meat on the same board as cooked meat or veggies and so on.

2.) Measuring tools. 1 set of measuring cups, 1 set of measuring spoons, 1 liquid measuring cup. I prefer metal for the first two and pyrex for the last. In my experience the numbers wear off the plastic ones pretty quickly and they stain. And yes you need all 3, liquids are measured differently than solids.

3.) Graduated mixing bowls. Pyrex are also great for these. I have this set and they have served me well.

4.) Pans. These really depend on what you want to do. If you want to focus more on cooking start off with a few basics. A larger stock pot, a sauce pan, one or two frying pans (i prefer to have multiple sizes) and some basic pans for the oven. A 13x9 metal or glass pan is a must have for me as well as an 8x8 or 9x9 square pan. If you want to bake as well you'll need to add cookie sheets and possibly a few more specialized items like muffin pans. Nonstick is sometimes frowned upon by chefs and cooks, but truth be told they're fine for most applications. Personally, I highly recommend against silicone pans. In my experience they smell foul and are a pain to clean.

5.) Utensils. Do not get the cheap shitty plastic set. Just don't. It's a waste of money. I cannot count how many cheap plastic spatulas I've thrown out because they melted or peeled or something. Go with silicone instead. You can use metal, but keep in mind metal tools+nonstick pans=scratched ruined pans. (This does not apply to spatulas used for things like stirring or spreading frosting btw, only to ones you will use on your stove). As for as what you'll need, I would suggest a set of wooden mixing spoons, and a set like this that includes the basic items; a normal spoon, a slotted spoon, a turner, and a pasta fork.

6.) Specialty utensils. Once again, these depend on what you want to do. Whisks are handy for a lot of things and a box grater comes in handy. A silicone pastry brush is nice for certain things and easier to clean than a normal one. A basic strainer was something I didn't realize how useful it was til I got it.

8.) Other Basics: Oven mits, towels, kitchen twine, tupperware in multiple sizes, egg separator, can/bottle opener.

9.) A basic cookbook. I'm a huge fan of this edition of the BH&G cookbook. On top of a lot of basic, fun recipes it includes a lot of extra information about tools, techniques, and some nifty tips and substitutions. I have a separate binder of my own recipes, but this is my most referenced cookbook.

I got some pretty good baking swag this year.

First up was a Kopykake. I will be making disgusting amounts of cookies over the next year putting this thing to the test.

A KitchenAid Architect was shocked to see it was the full set as these are stupid expensive.

Possibly my favorite gift for kitchen stuff this year was DrawerDecor which has finally made my drawers a non clusterfuck.

Steel prep table similar to this but not this model. Got it before Christmas but was told it was an early xmas gift.

Wire Shelving similar to this, but again not this model. Its 4' wide and each shelf can take 600. It freed up SO much room for me. I highly recommend more shelving for any of you guys/gals who have the room for it.

18" Magnetic Knife Strip, again more stuff out of shelves, off of counter tops etc.

Last but certainly not least, I finally got this cookie sheet from chicago metallic. Such a nice piece.


Now I think it is worth noting that I bake for a living, and that most people don't actually want a prep table or a 3' tall projector in their kitchen but damnit I love it! :)

The main theme for this xmas seems to be helping me get my kitchen to the OCD level needed in a professional kitchen. Not sure the missus loves the strict flow of kitchen as much as I do but man, it feels good and looks great.

Brownies are easy to make, easy to portion, have enough butter to properly carry the THC & the chocolate helps cover up some of the flavor. They freeze well & are easy to wrap up if you're making big batch.

...and you can bake them in these things to make the portioning really consistent

It's a little tricky in that Pizzacraft has earned a special place in hell for duping so many unsuspecting people into falling for this:

but... there are elements that I really like about the PizzaQue, elements that the far more expensive Kettle Pizza doesn't even incorporate.

First, the tilt is brilliant, because it gives you room to launch and tend, but it still gives you a lower ceiling in the back, and helps, to an extent, balance the top and bottom heat. The Kettle Pizza started off laughably tall, then they lowered the profile a bit, but they're nowhere near this. A steel plate for the top would be better than the Weber lid, but, out of the box, this should be able to do balanced 4 minute bakes no problem, which is crazy for a $70 piece of kit.

Second, the cage for the charcoal and wood is incredibly inspired. If you have any flame/charcoals directly underneath the stone, it superheats that edge, and burns the pizza- and also shortens the life of the stone. Maintainig indirect heat by using the cage could easily be one of the smartest things I've ever seen any of these BBQ/grill insert manufacturers do.

Speaking of indirect heat, I think that using an insert like this with an 18" Weber could be a little cramped. You want to have plenty of space for your charcoal and wood.

As far as using this for Neapolitan, you can certainly pick u/J0den's brain on his mods, and I can help as well, but, I think, at the end of the day, it's going to get pretty involved, while a 4 minute NY bake with the stock setup will be a no-brainer- and light years ahead of a 500F home oven.

  • This to clean all the above. *optional, obtain a dishwasher-safe brush at walmart.
  • A few of these. If you want to invest in them over aluminum foil and parchment paper. If not, omit.
  • A bunch of these. Wood handles are important. Plastic will melt when leaned against the pot and then snap off.
  • These for when those don't work.
  • A ton of these. Like, 10. Get them at wallmart for $2. Cut meat? New board. Cut onion? New board. Grate cheese and get schnibbles everywhere? New board. It's like instantly cleaning your countertop.
  • A set of these.
  • Knives and some sort of block/bar. Those are personal thing, only you can choose those. Size-wise think one for cutting cherry tomatoes, one for pitting avocados, and one for cutting cakes.

    Everything else, crock pots, even measuring cups, is optional. Slow cookers, microwaves, electric kettles, and rice cookers are all nice, but there is nothing you can make in them that you can't make in a pot, like humans did for thousands of years. You'll want measuring cups for baking, but for cooking you're adjusting on the fly anyways.

Please for the love of delicious beer do not boil your grains. To secure the bag what I did was wrap a bungie cord around the top of the kettle with the bag secured by the bungie cord. It worked out really well.

What I do is I have a metal cooling rack like this one and after the mash. I remove the grains kind of roll them up and put them on the cooling rack above the pot. I then let it drain for 10-20 minutes while it starts to get up to a boil. I then put the bag in a pot and bring in the grains.

I did 3 gallons for my first BIAB and probably will continue to for a while. I like the fact that I can brew more often brewing 3 gallon batches and it lets me experiment more. Also expect your efficiency to be low. You can compensate by getting more grains or have some DME on hand and adjust anyway. I think it is big enough for 5 gallons. remember after the fact you will want about 6.5-7 gallons of wort after the extraction so you might need about 8-9 gallons to start with. Add in the grain volume and you might exceed the 11 gallon capacity for some beers.

Here is a good video about the BIAB process and the merits behind doing 3 gallon batches at least at first.

I love these for roasting. Heavy gage, no rolled edges so water can't collect... beautiful. I noticed an instant improvement in my roasted veggies and meats when I got them; I actually gave away a small stack of kitchen equipment that because obsolete once these entered the kitchen. I paired them with this wire rack because it was inexpensive but good quality, but there are a lot of standard-sized half-sheet compatible racks out there, just check the dimensions before ordering.

I direct fire with my propane burner. I use an Aluminum Pizza Screen with a few DIY legs to keep the bag/grains off the bottom.

I use a really cheap Solar Water Heater Pump to recirculate wort during the mash. I run it with a 12 volt power supply, and I am pushing about 2 gallons per minute.

I make almost everything from scratch but have yet to perfect a pizza crust. We typically buy them premade and then add our own spices, sauces and toppings. Our favorite is Still Riding Pizza which is very close to an authentic thin crust, easy to make and the cheapest crust I've found on the GF market. Our second favorite is Against The Grain and comes in second because it has the taste and texture of a pastry dough (like Croissants) but crispier around the edges. Whatever you make I strongly suggest using either a pizza screen or a pizza stone to improve texture.

The secret to the softness of those breads is that they're baked in a sealed pan, like this one from Amazon, which prevents a hard crust from forming.

For the recipe, any 'sandwich loaf' recipe will be in the ballpark. Compared to a bare french dough, adding one tablespoon sugar and 4 oz butter per pound of flour (in addition to the salt and yeast) and replacing the water with milk is pretty common.

but you dont NEED a torch. Most of the time, i prefer to sear on a pan. So, you want to pat dry out your food once its out of the bag (paper towel), then i usually rub it down with oil (dont do EVOO though) or clarified butter, then sear in the pan and throw in aromatics. Usually sprigs of thyme or rosemary do well, and just baste the food with it for about a minute to minute and a half each side.

For my small items, I'm using a Japanese yakitori rack. I place it over my cast iron pan and go to work. The rack kinda looks like this (not my photo).

Hairdryer should be safe, so long as you don't choke the flow. I'd recommend laying the components out on a grate (or just put small items under the corners if you don't have one) to get airflow underneath, setting your hair dryer to full blower/moderate heat, and letting it blow on the components over night. Probably good to turn them at least a couple times. Your case should also be dried, because water can be trapped between metal surfaces and promote rust, and may wick or drip back onto your components when you reinstall them.

If you have more than one hair dryer in the house, I suggest employing all of them. Hair dryers only; no heat guns. (Obviously.)

Honestly? I Have no idea. I know the recipe specifies it being 16" in diameter though, so that's why I'm assuming it isn't grandma style. I never saw her bake it, my relationship with her was when she was in her late 80s to early 90s. I just assumed that a stone would be the best way to do this

It takes tons of practice. I've made a lot of pizza at home, and my dough-tossing skills are still a bit shaky. Just remember that softer dough is easier to toss, so be careful not to over-knead it. Also, if you buy ready-made dough, be sure to let it sit out to warm up to room temperature. And catch with your knuckles, not your fingertips.

Rolling pin works, too. :)

Exactly. Use the screen just like a pan. No need for a peel.

You could certainly use it in a pinch, but I wouldn't really recommend it. Foil would offer much less support than a screen, so you'd almost need a peel anyway. Plus, the foil lacks the ventilation provided by the screen. A good pizza screen only costs as much as a couple of rolls of foil anyway, so there's really no reason not to use one.

I use the below pizza stone and pizza screen. Make sure to pre-heat you oven for at least 30 mins at the highest temp possible. Mine goes to 525 and I cook for 12 mins, rotating 180 degrees 6 minutes. And I let the pizza cool on the pizza screen. Made the mistake when I first got one of trying to take the pizza off it right after coming out the oven.

Today I broke my dresser by attempting to use it as a step stool to get to the top shelves in my closet. Why was I using my dresser as a step stool? Because I couldn't afford a step stool :| Which means now I get to buy a new dresser, and until then the drawers are just stacked up in the back of my closet.

So, as much as I hate my most useful gift being a gift card, a gift card would really really help put a dent into the $60+ I'll need to spend on a dresser soon.

A real, actual item that I think is very interesting (and entertaining!) is The Princess Bride <3 And for a useful item, this silicone brownie mold solves the problem of who gets the edges and whose piece is bigger :-D

I use either a food processor, a stick blender, or just mash some things like squash, banana, avocado and sweet potatoes. I roast lots of the root veggies or tubers (carrots, parsnip, sweet potatoes, etc) and steam most everything else. I also do larger batches and freeze them using these baking molds. Each little square is about a tablespoon, once frozen, it's super easy to pop them out, store in a ziplock and I'll be able to use the molds in the future for baking once we're done with purees.


For meat I steam or saute and then puree as well as I can in the food processor. LO doesn't mind a bit of texture so meat is usually still a bit lumpy. I then make tiny meatballs and freeze them on a cookie sheet and store in a ziplock bag.


When getting food together for a meal I just pull a few different things out and make some mixes that sounds good to me. Carrots with sweet potatoes or parsnip, peas with chicken, plums and oatmeal. I also give her avocado and bananas, which I just mash up as needed. We also add a tiny bit of spices sometimes. We have avoided cinnamon though since it is a pretty common skin irritant in babies. Some of it is trial and error, but it's such a small amount of food it's doesn't feel like you are wasting it if they don't like it.


Also, just a heads up but it's pretty common for babies to get constipated when they start solids. Make sure you are offering some water. We also always make sure we are giving her a "poo friendly" food at ever meal. These include peas, plums, prunes, peaches, pears; super easy to remember since they all start with "p" as does poo, haha!

Do you have kids? Make cloud dough! 1 cup of baby oil to every 8 cups of flour. It's a very cool texture, and fun to play with. My son loves cloud dough; I can't wait till the weather warms up so I can make more for him to play with outside (get one of those cheapo wading pools, they're perfect for small sandboxes.)

Otherwise: Bread! I love to bake.

Quickbread
2 1/2 C warm water; 6 TBS sugar; 3 TBS yeast; 2 TBS oil; 6 C flour; 2 tsp salt; 1 tsp baking powder

Stir together water, yeast, sugar, and oil. Let sit for 5 min, until it becomes frothy on top. Add flour, salt, and baking powder. Mix well and knead lightly.

Pour into two standard loaf pans (I have one of these, and regular loaf pans just don't do it for me anymore. I love this thing so much) and brush (optional) with milk or honey (I mix milk and honey together and brush all over it. It helps produce a softer crust, especially in an open pan.)

Bake at 400 degrees F for 10-15 minutes. I actually don't remember what I do for mine; it's different because of the pan. I prefer low temps and longer bake times. Took me a couple goes to get it perfect.

Also, here's a recipe for English Muffin Bread that is really easy and very, very good (and makes excellent French toast). Word of caution on that one, though, it does not keep very long (about two or three days), so I'd recommend freezing three of the four loaves that the recipe makes, or give them away. They do make excellent gifts.

I love baking. I ONLY buy 25 lb bags of flour, and hoo boy do I go through them fast. Glad flour is cheap!

Most of the loaves we make are just for the dinner table as we do not eat a lot of Sandwiches. So we typically use a dutch oven or pizza stone. When we want sandwich bread this Pullman Pan from USA Pans is perfect. The top fits on tightly so the bread steams it self. The bread slides right out not sticking at all.

As the other posters have said, 139.5 is too high for an end result of medium if you are going to sear in pan or grill to finish. Either of those methods are going to add a good bit of additional heat to the steak.

I would recommend trying 131 degrees if you are going to use the sear method you described. I prefer medium rare, and have my steaks at 125 and then sear hard and get a good medium rare result.

If you want something that doesn't transfer as much heat into the meat, you can try finishing with a torch. Allows a crust formation with almost no additional cooking inside the meat. I have this one. Some people taste uncombusted fuel with the torch method, your mileage may vary. I prefer my steaks seared in pan, but use the torch on other things like lamb and lobster.

Salt, pepper, garlic powder, cayenne pepper (just a tiny bit) with dry thyme and rosemary in the bag, didn't have any of the fresh stuff.

The sear was just with a simple butane kitchen torch. I normally do torch and pan with oil and butter sear but was being lazy and didn't want to clan another pan.

Both. I've only found a couple packaged sauces I enjoy and they're hard to find, so I've been making my own lately. Just lightly blending a can of diced tomatoes with some salt, oregano, basil, etc.

I like a thin crust, medium sauce, and medium to light cheese and toppings. Too much sauce or cheese on a thin crust and it won't get crisp.

You could make a sourdough starter. It'll take about 1-2 weeks so hopefully if you start now it'll be ready once you need it. You can follow these directions: https://www.theperfectloaf.com/7-easy-steps-making-incredible-sourdough-starter-scratch/ That starter has a higher percentage of water than FWSY's, but you can just switch to the feeding method in the book once the starter becomes active.
