I prefer metal spatulas too. Just make sure it doesn't have sharp corners. I bought this one and filed the corners round.

Lay it in the middle, lay the packer brisket over the top. As it starts to shrink from cooking you can remove it. And 19+ pound brisket will work fine on the smaller WSM.

Get some rib racks like these and utilize that 22.5" WSM rack space. You can probably fit 5-6 racks of ribs on the top rack of and another 5 on the bottom. Use the 3-2-1 method: that's 3 hours of smoke(225°F) then wrap in foil with liquid of choice(I use apple juice/cider vinegar 1:1) and cook for another 2 hrs, then unwrap and sauce and leave to cook for 1 additional hour. If using baby backs, use a 2-2-1 method instead. The meat should pull back from the ribs when they are done.
I would plan to have 1/2 rack of ribs each per person. Even if your guests dont eat all of them they're very easy to freeze for a rainy day.

Make sure if you buy a spatula the corners are rounded. I've seen ones that are very stiff and have squared off corners. The corners are sharp and I could see how they'd dig into the seasoning.

I'd probably be comfortable doing 4 at a time, but so far I've only done two. If you're gonna be doing this relatively often invest in a good, solid, non-slotted spatula. Something like this (I haven't used that one, but that's the idea). I'll throw two balls of meat on the steel, then press them one at a time (each for about 10 seconds) using another spatula (or wooden spoon, whatever) to press down on the big spatula.
The baking sheet idea is intriguing, just be careful and use a couple oven mitts - that pan will get real hot! One thing to watch out for is when you pull it off, hopefully the meat doesn't want to come with it. I sometimes have that problem with just a spatula - in those cases I usually just keep pressing for a few seconds longer.
