There are a few books that are pretty standard when learning about how the American university came to be and how they work.
this is a great history of how US colleges and universities came to be what they are, though a bit outdated.
this is another - though a lot drier in my opinion.
Derek Bok looks at the system and offers a thorough examination and criticism, not a history. His books are great and really informative, though.

I'd recommend that you read "Dean Dad's" blog; he has written a lot, in direct response to people like you asking questions about getting hired at community colleges.

/u/RPShep is 100% right; you might be able to find teaching in history, but it's not hugely likely; the market is very, very tight -- you would be better served by being open to lots of possible teaching subjects.
