I take some egg thins (they are like crepes and I found them at Costco), put a few blobs of plain goat cheese in the middle of them (I get the big tubes at Costco), and then add some Stevia Blueberry Jam (I use this kind), and then roll them up and add a bit of whipped cream. It has a blueberry cheesecake kind of flavor.
Those egg thins are amazing. I haven't done it yet, but I am going to try getting some ricotta cheese, mixing with a Truvia packet, and some Hershey's sugar-free chocolate chips, and filling it with that, so it's like a cannoli crepe.

You're welcome to try adding body with a variety of commercial thickeners. I'm not sure the sorts of dosing rates you'd need for beer. Like pectin, they'll have a set of conditions that may not be ideal for beer. Even then the mouthfeel provided may not be positive.
Hey I know this is a sort-of old post, but I was just mentioning Good Good Sweet Jam to someone else, and thought I'd search and see if anyone else here had tried it. If you still haven't found one you're crazy about, you should try the Good Good. It's the best one I've come across so far.
Sweet Jam with Stevia by Good Good is sweetened with Stevia. It’s still a sweetener, but is way better than cane sugar and I find that a little bit of stevia doesn’t make me have cravings like some other sweeteners do. I hope my link works (I’ve never linked from reddit before) :

I can get Glory brand in some Asian supermarkets but didn't seem bougie enough...
I checked but they renovated and changed some of their products! They replaced the tubs I used to see with some fig spreads that look really similar. So my guess is it was a fig/nut spread. Hope that helps and sorry about the delay

Lingonberry jam, it's sold at Ikea, it's awesome with those meatballs.
