Yes, you can screw onto that valve. You may find this one will work well for you:

Schedule 40 is just fine. It can handle all the pressure your water system can put out. But you need to know that PVC degrades in sunlight. So paint it or tape the pipe please, to keep the sun off of it.

You know, you are thinking of building a clunky and rigid misting system. Half inch pipe is really overkill for this. You can do this cheaper and better with a 1/4" kit:

You can easily move each mister around as needed, and if you install a valve on each line, you can also throttle them as needed. Lots of water to some plants, less to others.

I tried using the pump sprayer with the misting line attached but the water pressure was off and I couldn't get it to work. I was putting it together last minute and just going with recommendations from this sub so maybe with a more planned out strategy I could do it. But this year I'm investing in one of these Home Depot Arctic Zone Misting Systems for Coachella and any other camping fests I attend until it breaks (hopefully never)

1/4" does seem a bit more practical. I originally saw the above listing with the 1/2", so that's what I thought I should stick with. But the 1/4" kit you just posted does seem better.

However, since those are on 1/4", I would need a 1/4" tubing. Would it be as easy as something like this?

Also, since that valve has a 1/2", are there any adapters that I could connect that valve to the 1/4" tubing? (One side threaded for the valve, the other side goes into tubing)

For the nozzle the droplet size primarily does not depend on the diameter of the outlet, but on the method of fading and splitting the flow. You don’t have to use a 45 micron nozzle to get "air roots", buy a quality 100 micron nozzle - it will give you drops from 5 to 10 microns.
