I'm a big fan of mushrooms, eggplant, and squash as meat substitutes. These would all fit in well with a "meat and potatoes" style meal. Also this recipe book seems like it could help you out. No personal experience with it, though.
Does he have a slow cooker or anything? If so, maybe a gluten free slow cooker recipe book like this one? If he doesn't have a slow cooker and you're on a bit of a budget, I have this one and while it wont make giant family meals, it will make enough for 2 people or so. :)
