I have made a few sodas so far. Most commonly, (and my personal favorite,) I make a ginger beer. If you have a juicer, that's the way to go to make good home-crafted sodas. You can create all kinds of flavors with just the juice of fruits and vegetables, then sweeten with simple syrups, add water and carbonate. Keep in mind that using fresh juices puts a certain shelf life on your drinks. (Still working on how to preserve one's sodas for bottling, etc.)

I personally use a soda siphon for carbonation (http://www.amazon.com/gp/aw/d/B00007JXR7). This has its perks and downfalls. On the one hand, forced carbonation produces zero alcohol content (which is why I go with that,) and forgoes the possibility of accidentally blowing up your bottles of soda due to over-fermentation (I've actually seen this happen.)On the other hand, it fizzes out and goes flat faster and more easily than fermenting. This has been an issue when I've tried to make a bottle of carbonated ginger beer (or any other soda I've made) and then attempted to drink from the bottle. By the time you're doing so, there isn't much carbonation left.

My next venture is Sarsaparilla, or maybe an actual root beer. Either way, creating and perfecting your recipes is fun and delicious. I really enjoy it as a casual hobby. Good luck in your attempts!

Get yourself a seltzer bottle that takes CO2 charges. I got this one for my parents 2 xmases ago and they use it everyday. You can just add whatever juice/concentrate/syrup before a spritz of soda water.

Btw, I only paid about $35, apparently now priced at $99 and change, so shop around.

Edit: you can get the charges in bulk from. Amazon and they will come out to about 40 cents a piece

I was planning on getting one of these. For me its easier than being stuck with an entire bottle all at once, and its easy to spritz into fruit juice or something like that.

It's going to be much easier if you get a soda siphon. You don't need to get a sodastream or anything fancy.

This just uses the cheap mini canisters.

If you don't get that, you are going to somehow need to build something that can withstand up to 200psi+, likely two containers connected together so you can generate CO2 in a separate one. 200psi is some serious pressure and you'd really want to use proper fittings and rated line, which will wind up costing more than just buying a soda siphon.

It's one of those oddball kitchen gadgets that is somewhat expensive & niche, and has annoying recurring fees for the different cartridges, but you'll find yourself using it all the time for weird little projects...custom sodas, homemade whipped creams (dairy & non-dairy), modernist techniques like foams, etc.

If you're the type of person who likes to tinker in your kitchen & have the budget available, then it's a super-fun toy (tool) to have in your inventory. I use this & my Searzall on a weekly basis for all kinds of random stuff! I can dig up a list of things to try if you're looking for ideas!

And if this is intended for party purposes, keep people the fuck away from the co2 injector. Folks like to get trigger happy. Personally, I just pop it off and keep it in my back pocket. Mind you, that's the whole apparatus. If you take off JUST the injector and leave the gas connector there, you'll offgas the keg.

Headspace doesn't matter if you use CO2 to blanket it.

You can get it pretty cheaply on Amazon. Buying a case of One Shots is MUCH cheaper than buying wine preserver. One can of wine preserver contains about 8.2 grams of CO2 for like 9 dollars...the one shots are 8 grams of CO2 and are 40 cents each if you buy 100 of them. 2 of the one shots (or cans of wine preserver) will fill a carboy. To dispense them, get a Whipped Cream dispenser.

I've went to a soda maker. Taste really depends on the water you use. You local restaurant supply store should be able to get you one, or you can get them online amazon. Charges are cheep, running you around $0.50 per liter of water.

If you want something for life, get a standard old-school soda bottle from iSi. There are plastic parts on the inside of the metal bottle but they can all be replaced if they wear out. It doesn't exactly break the bank to just buy one of these, especially if you have to go out and buy the parts for the DIY version anyhow.

I got one of these to make fancy drinks for my wife when she was pregnant. Carbonated juices are awesome.

I bought a pound of this about six weeks ago. There's nothing wrong with it, but I hugely overestimated how much of it I could drink. On the upside, it makes great iced tea, and is wonderful carbonated.

At the end of the day, I like a lot more variety. The additional cost of buying 100g at a time is worth it.
