and if you work a 10 - 12 hour day like I do, but your slow cooker only goes up to 10 hours, set it up at night and put it in the fridge. That will add 1-2 hours of cook time.

Received my Anova this week, so tried an easy dish for the first time out.

Recipe from Beginning Sous Vide


2 ripe pears, peeled, halved and cored

lemon juice

2T softened butter
1 1/2T sugar
1t vanilla paste
1/4t ground star anise
1 vanilla bean halved

sous vide for about 60 minutes at 185F.

I doubled my recipe because I had 4 people for desert. I cooked for about 60 minutes.

I think the recipe turned out very well. The pears were cooked through without being mushy. The flavorings were present but delicate, and throughout the pear. The aromas were wonderful. The vanilla and anise got expensive, but I have some for next time ;) Since I doubled, I used 4T of butter and it was a little much--not quite greasy, but a little too much. I might try 3T next time. Especially if I serve with whip cream or over ice cream, which would be heavenly.

As for the Anova: I found the noise to be very subdued. The mechanism is easy to disassemble. It took awhile to get the heat to raise from 175 to 185, so I put a tinfoil hat over the pot which seemed to help. There was still a significant amount of water loss from evaporation.

My biggest gripe is the function of the timer and the temp set point--I wish the timer would only begin to count down after the water has reached the set point, and so be dependent on each other. If I eg put pears into a water bath at 165 when the recipe calls for 185, I'd like to be able to set and forget it, and still know that they will receive an hour at 185F before the unit completes the cycle.

Also, the unit is quite a bit bigger than I anticipated. It'll take more storage than I expected, but the power cord is removable so it can coil out of the way.

All in all I'm very excited to begin my culinary exploration!

So great that you care enough to give your senior guy the very best nutrition! But he needs additional vitamins and minerals (especially calcium) if you're going completely homemade, with that recipe. You can make a vitamin topper yourself (like this vita-powder on page 9), or you can buy one, like Canine Chefs Complete, Dynovite, BalanceIt etc.


I also highly recommend the book Feeding Your Best Friend Better by Rick Woodford to people getting started with homemade, and he also has a homemade vitamin topper recipe in his book you can use.

There are TONS of great recipes out there that don't involve that.

I suggest the book Not Your Mother's Slow Cooker Cookbook, it has tons of from scratch recipes for the crockpot.

I also enjoyed Southwest Slow Cooking for that same kind of deal.

Alton Brown has a couple of keepers for the crock pot as well. I would suggest poking around foodnetwork, allrecipes, and foodwishes for some other good stuff.

I have this cookbook and I've really enjoyed several recipes from it. Particular favorite is the "sweet and sour pork", though I made it with chicken instead. It was a really good replica of sweet and sour (though less sweet, of course) that sometimes I get a craving for.
