As far as discipline is concerned, just remember that bunnies are not like cats or dogs. The do NOT understand at all negative feedback, like yelling or say no or being locked up when they misbehave. That could just undermine the trust between you and the bunny. Instead they do understand positive reinforcement, thus to “discipline” it is best to build positive associations and redirect their behavior to thing that are allowed in a way that makes them want to do the good things, vs not want to do the bad things for fear of being punished...See here http://bunnyproof.com/living-with-a-house-rabbit/how-to-discipline-your-house-rabbit.

You need to get a more secure gate in your case. Bunnies are curious naturally and they won't to explore... like you cannot not stop a dog or child (unless you get them both to the point where they are just terrified of you overall) you won't be able to stop a bunny. Btw plastic is really bad for them to chew on also... so get a better baby gate that can be anchored to the wall with either tension on screws so he can't get through. You can also glue/secure some sturdy cardboard to the inside of the gate you have so he doesn't chew the plastic.
Now when he starts trying to chew and get through anyways, this is were you redirect! You offer him a toy or a chew that he likes instead and when he does take it you give him a little treat or a piece of favorite green as a reward. You do this many times to reinforce that chewing on things that are allowed is good and results in yummies. Of course you need to make sure he has enough things around to actually keep him from getting bored and wanting to chew on stuff he should not... toys and things to stimulate his mind - they are smart and do get bored.
Bunny won’t stop chewing everything, what to do:
What might help is a few things:
Hahaha! That's too cute!
But as a heads up, that kind of fluff is pretty controversial. There have been reports of hams getting tangled in it or digesting it and causing bowel impaction.
I'm not going to lie - my ham LOVES fluff so much that I couldn't really bear to take it away from him. So I did some research and started using Kapok shell fluff. The fibers are shorter, break very easily, and therefore not so much of a concern. You can find it at PetCo or order it online:
https://www.amazon.com/Kaytee-Kapok-Nest-Chew-Pack/dp/B06XSH5796
http://www.petsathome.com/shop/en/pets/rosewood-naturals-play-n-bedding-pods-2-pack (if you're in the UK)
However, if you search around, you'll find plenty of people arguing that Kapok silk is equally as dangerous as all other pet fluff. I personally disagree. But at the end of the day there's never been a study on it, or even of the different brands of fluff available.
Wooden platform (they easily bolt onto the cage wires)
Another.
Another.

Wooden log

Arch made of sticks: I have three of these in Max's cage and pens, they're great for hiding under and climbing over. If you wedge some small seeds in between the sticks it will encourage scratching.]

Wooden wheel: these are good because it's the constant rubbing of the claws through running that gets them and keeps them a nice length

Wooden rainbow: you can get one with colours as well

Wooden seesaw

You can use a wooden ramp or ladder. If you use it between the ground and a shelf or two shelves
Another.

Other accessories: again squashing little seeds in between the woven parts should encourage scratching to get it out
Twisted grass

Also a good idea might be to look up some rat safe treat recipes and make a little ratty goodie bag for them (banana chips, oats, dried pasta, certain seeds, etc.)
Sorry about the creeping - I was mainly looking at your user history to see if you have ever posted anything about your gerbil before. I thought I might be able to give you better advice if I knew more about her.
What kind of houses to you give her that she chews up overnight? This is what my gerbils house looked like after about You could get her a house made out of hard wood or a coconut shell. My gerbils love both to hang out. I've also seen people use a flower pot with a hole. You'd also have to supply her with something to actually built a nest. Plain, unscented toilet paper would be good enough. She'll shred it and built her nest out of it.
You can also give her sticks you find outside to chew on. If you want to, I could try explaining how to make sure they are safe and mite-free. The safest way, however, would be to buy sticks like these, even though they are sort of expensive.
I would really recommend more bedding so she can burrow.

Best thing I could find (10.7 x 18.4 x 8)
The only thing I would worry about is the little ones chewing on the coating, this size should cover 1/3 long ways.
Also you may be able to use the hooks on this not only as a stand but you could make very small holes and hook it to add even more room.
However if this doesn't work, you could add adhesive hooks so you can use cage hooking items like this
If the hooks aren't what you want then you can add items like these:

I really hope this will help you and the little ones out!
Edit: Forgot to add this one
We've had this before, it's not nearly large enough for a hiding place. It makes a good wall/ramp/chew though.
