Warning- they are very picky and apt to disintegrate into one massive chewy dumpling unless you are very careful to not overcook them, immediately rince them in ice water, and immediately oil them. Still, WORTH IT! Nomnomnom.
I order my favourite soba noodles from Amazon. They have no added sodium (0.1 mg sodium per serving compared to upwards of 1,000 mg per serving in some brands) and break down to a little over $2 per package when ordered from Amazon.

Ugh. No more of that chicory root for me! I ate some Nuti-Light chocolate spread last night for a treat, but it was a trick instead. It has given me much lower intestinal unpleasantness. I even dreamed about needing to take a dump early this morning. Plus, I got to have bonus leg cramps in the middle of the night. Not my best morning, homies.
I'm hoping it's past by tomorrow. I'm planning to go with DH on a work trip, driving our own car, dropping him off at a meeting then going for a hike in the woods nearby. It's likely going to rain a bit, but I don't really care, since I like a nice hike in the rain.

Kabuki ramen.
I never see this style mentioned here. From the package shape, you can see that they are not made with oil-fried noodles, as opposed to every other instant ramen I see here. Instead, the pack contains normal, non-fried noodles and a liquid sauce which is more than just flavor and oil.
Why aren't they more popular? On a scale from instant to restaurant ramen, I'd say they are on two-thirds to restaurant ramen.
I just ordered these from Amazon. They should arrive later today. Black soy bean noodles. 7 Net Carbs per serving.
Though I’ve found other ways to prepare the miracle noodles to (supposedly) make them taste better so I’ll be trying those again in the near future.
And these are on my wishlist for next time. Mung bean noodles. 5 Net Carbs per serving.

i havent had any trouble finding soba noodles at any chain grocery store but then again i am in los angeles... not sure where you're at but here's a good product on amazon!

I just started my search for palm oil free instant ramen as well!
So far, I have found Koyo and King Soba to be the palm oil free/organic brands.

I feel that our best bet is to purchase palm oil free instant noodles and cooking our own ramen.

Regarding ramen... It is possible to get 100% buckwheat noodles. I had a wheat sensitivity for a few months in grad school and found them at a Korean grocer. I ate a ton of them.
Asian grocery stores have them. Or sometimes in the aisle with ethnic foods in a regular grocery store.
