You can't go wrong with small-sided games:

1v1 : dribbling
2v1 and 2v2: defending (delay, 2nd defender positioning etc)
3v2 to 4v4: passing, give-and-goes, triangles etc

A decent book: https://www.amazon.com/Skills-Strategies-Coaching-Soccer-2nd/dp/0736080228/ also if you need activities: http://www.nscaa.com/Store/SearchResults.aspx?Category=MANUALS but probably you want to ask your local club or check online for coaching certifications and take at least the first one (ask school to pay for it.

In our courses in Canada we were taught to run practices with the GAG methodology (game-activiy-game):

  • short warm up (see FIFA warmup), let them (or a captain) run it by themselves after they learn it, using two lines for ex
  • Game: game with restrictions (3 seconds to pressure, two touch max etc) or stopping it from time to time to show mistakes they keep making
  • Activity : this is the "drill" part, ideally it should tie with the previous game and be progressive in difficulty (you want them to succeed always first), for progression you can make use of space (making it smaller) or time (one-touch for ex) or changing opposition (no opposition - passive opposition - opposition outnumbered - full opposition), they should be easy to understand and involving all the kids all the time as much as possible.
  • Game: unrestricted game

Make it fun, come with a good attitude , manage the parents early on (meeting, frequent updates)
