I choose to decant wines, each younger and previous. It is an indication of respect for previous wines and an indication of confidence in younger wines. Decanting previous wines, just some moments earlier than they’re served, helps to make sure that the wines’ readability and brilliance usually are not obscured by any deposit which will have developed over time. Decanting younger wines a number of hours earlier than they’re served provides the wine an opportunity to bloom and attain a stage of improvement that usually requires years of ageing.- Georg Riedel
