Both those polishes are exactly the kind of stuff I'd try out. I use Kiwi polish, but these look very similar. However I'd highly recommend bringing your shoes to a cobbler in person- they may let you try it for free.

Unfortunately saddle soap probably won't work- it can't put colour back into your shoe, only remove superficial marks.

In terms of water protector, there isn't much difference between brands. Something like this should do the trick: https://www.amazon.com/Meltonian-Water-Stain-Protector/dp/B002TECJLS/ref=sr_1_1?ie=UTF8&qid=1474574652&sr=8-1

I've been looking at shoe trees. Do you think this one is better, or this one. Or do you have one that is better than both of those. Also, with the condition that my shoes are in, do you think that using a shoe tree now is too late for my shoes?

No you can't just remove a heel like that and expect to have a functioning boot.

Would an overshoe work?

Just tried to buy these,

https://www.amazon.com/gp/product/B01N4Q4QOC/ref=oh_aui_detailpage_o01_s00?ie=UTF8&psc=1

The fit is unexpectedly great, but they have this one, unworkable problem, the back outside quadrant of the heel is angled in a way that makes it lower on impact than the other side of the heel, so it all falls in that direction, backward toward the outside.

The shoes I've tried to buy recently have either all been actually angled as if intended to do just that or built in a way to compress in that direction.

I need something that is just the other way around, or simply even.
