My bully is also 7! We use Earthbath shampoo. I'd recommend these Keto-C Antiseptic wipes if he has any skin fold irritation. You might want to try a fish oil to add to his food; that should help his hair and they just love it. My pup has some arthritis and hip dysplasia, so we give him a glucosamine/chondroitin supplement. He has a bit of a grain sensitivity so he eats Rachel Ray Just Six. I keep Benadryl on hand (vet approved) because it helps when he gets seasonal allergies. Get some dog toothpaste and a brush; it really does help. My pup loves any kind of dental bones, also. Keep an eye out for a head tilt or unusual ear wax/discharge as bullies can be prone to ear infections. Make sure he wears a harness (we've used a cheap roman harness for years but recently got this harness) and take good care of his neck- my boy has recently been dealing with a prolapsed intervertebral disk, which is caused by normal play like tug of war and fetch, jumping off the couch, going up and down stairs, and generally having a huge head. So now we play very carefully, carry him on stairs, and have him on an anti-inflammatory. He uses a raised feeding dish to prevent strain. We also put a little tennis ball in his food to make him eat slowly (he has a tendency to eat too fast and throw up). I use Argan oil and petroleum jelly on his nose when it gets dry.
I'm sure he'll let you know his taste in treats and toys soon, but my buddy likes antler chews, Busy Bones, and all stuffed animals. Rawhides make him throw up. Congratulations and good luck!

Bathe her once a week - Letting the shampoo sit for at least ten minutes on her skin.
There’s absolutely all sorts of things you can do for her - the old owner is an idiot.
It’s very likely she could have a food allergy as they are very common. I would go visit your vet and get their recommendations on how to scale her diet back to try and identify what the culprit is. There are allergy tests that can be done as well. Chicken is a common allergen among many bulldogs I know. We feed Taste of the Wild but you can find many different foods that are grain free and have single proteins.
Benedryl will help as well - you can give her 1mg/pound of body weight (one pill is 25mg) every 4-6 hours to help relieve itching.
That shampoo brand - Duoxo - makes many different products that are basically gold if you own a bulldog. They have wipes as well - but I just buy unscented baby wipes at Costco to help keep their faces and rolls clean.
We fed a raw diet for years, it cleared up my bulldogs skin and allergies within days. This is a good book and a great place to start: Raw Dog Food: Make It Easy for You and Your Dog
Edited: just wanted to add that the diet also has other health benefits as well. It keeps thier teeth clean and anal glands clear - plus the shiny coat
We used this shampoo on him even though he was old because it was so gentle and didn't make problems for his sensitive skin.
Also, this snout soother or something like it will help keep your dog's nose from getting crusty and dry. Apple cider vinegar is super helpful with ear cleaning because you can put some on a cotton pad and wipe out the inside of your dog's ears to help keep problems with ear infections at a minimum too.
Bulldog maintenance is very time consuming, but worth it. I loved my drooling beast and it was just part of our routine.
The first piece of advice I always give people is: Go to the Vet. Seriously. Do it. Just because someone else on the internet says "Oh that looks like XYZ..." doesn't mean it is. After 4 years volunteering/fostering for a Bulldog Rescue and with two of my fosters currently dealing with paw/skin issues, I can tell you there's many things it could be. The two fosters paw issues look similar, but are two different things so they must be treated differently. One has Inter-Digital Cysts and MRSA, and the other has Demodex. Both treated differently. Yours could be an allergy, hotspot, anything really. So go to the Vet and depending on where you live, look for a Vet that specializes in Bulldogs. If you're in the Southern California area, I can recommend two of the best.
Secondly, buy your self this stuff I'm going to link. You can use it for all sorts of things: Paw soaks, wrinkle cleaning, treating/cleaning of wounds, etc. This gallon bottle will last you at least a year, where as the 16oz bottle you'd get from a Vet wouldn't and could cost up to twice the price of the gallon. (My apologies for the link length/formatting, I'm in mobile.)

Our vet recommended and sold us a bottle of chlorohexidine solution. The solution is very, very dilute. I found a gallon of 2% solution on amazon. This is enough to make 50 gallons of what you need. We used this when we first got our porkchop. It works great.

Pick up an English Bulldog Book. I keep turning to it year after year. It has helped me immensely from yeast infections to helping soothe raw wrinkles. I have this one.
Mainly just clean them, watch their diet, they are sensitive to extremely hot & cold weather, and give them enough exercise and play, but don't walk them for miles.
EDIT: I do feed mine Buffalo Blue label dog food, have loved ones watch her when we are away (instead of boarding), and have vet checks regularly. Get some chew toys (but no raw bones)!
> Also, don't expose them to too much play in the heat.
Very much this. They're determined and will often over-exert themselves while playing or on walks.
I bring a small water-bottle and a portable water-bowl for walks in the summer, that will help keep their throats wet and not quite so raspy. Hard panting can cause their narrow throats to get inflamed, which then restricts the breathing more.
You can also splash a little water on their chest/throats to help keep them cool in warm weather.
I've got two bulldogs and these have lasted a long time. Some of it is that they tend to not go nuts about these unless I'm actively playing with them.
However, THESE and these surprisingly have lasted months now and my guys both are crazy for them - especially the orange one. Don't bother with the treat inserts after the first ones though, they pop right out and just get eaten whole.

All natural, and Linus loooooves it. Pricey though.
I used to get him Royal Canin because thats what the breeder had him on, but since ive switched all his skin issues have gone away.
Unfortunately he already has a bald spot on his tail, and even the best food in the world wont fix that :(
Yup! Great if you have carpet http://www.amazon.com/Coolaroo-Elevated-Small-Brunswick-Green/dp/B000BQPF4O?ie=UTF8&psc=1&redirect=true&ref_=oh_aui_detailpage_o03_s00

I've been looking at these harnesses. Do they tend to fit bullies well?
This happens to my english bulldog. We've never gotten a straight answer as to why, but somedays it looked like he pulled a muscle. Some days got so bad he couldn't put any weight on his back leg.
After a few vet visits that turned up nothing, we started giving him Salmon Oil in his food. http://www.amazon.com/Grizzly-All-Natural-Supplement-Pump-Bottle-Dispenser/dp/B0002ABR6E/ref=sr_1_1?ie=UTF8&qid=1405375839&sr=8-1&keywords=Salmon+oil
He has only been "sore" once in the year that we've had him on it. Worked for us.
