Edit: I thought you were referring to neighborhood tipping, not restaurant tipping. Disregard this then.

A chapter in this book describes the Schelling Model of neighborhood tipping very well. It's the place to start. Then there's Schelling's original and very well-cited article in the Journal of Mathematical Sociology.

So neighborhoods can be seen as complex networks of heterogeneous agents with varying levels of tolerance of and preference for diversity. You might want to read up on agent-based modeling in economics and see how it relates to tipping models. Link1. Link2. Link3.

Start with the Schelling articles and search for "segregation," "tipping," and "Schelling" in your university's journal database. Hope this helps.
