First off, I wouldn't get the mark 1 lens with GH5. Spend the little extra money if you're going for a Panasonic lens and get the mark ii to use in body image stabilization. Basically it would come down to a choice between a cheaper lens and a gimbal or a lens with dual IS. However, the camera + the IS 2 lens would be your budget, and there's certainly lots of other stuff to buy when getting started.
This is a set up I have used with the Black Magic Pocket Cinema Camera and it works great, fully expect it to look even better with the GH5:

That is a lightweight 14mm 1.7 lens (works great in low light) and the most affordable gimbal on the market. I also have access to a Ronin-m at work, and I have to just say, the shots you can get on both are different, but the Zhiyun is soooo much easier to set up and get great shots with. Plus it fits into a small backpack and is far less to lug around. I would also recommend either one of these monopods to use with this system:

^ This is a great set up with the Crane. What I do is velcro the included remote to the lower point of the monopod and use it to control the crane manually. I can then extend the pole (even smoothly while filming) and essentially have my own hand held jib anywhere I go.

^This version is a bit heavier, but also a touch more stable. You can not smoothly lengthen the pole while filming, but this monopod has the added version of feat attached to the bottom. You can set it up at its shortest and it will stand on its own as long as it's not windy. Great for setting up shots in the wild that you would also like to be in. I put a quick release plate between each point of contact (Quick release on the monopod -> crane, and quick release on crane -> camera), and you can just as easily set it down on the feat and detach from camera with no issues.
Now, something to consider is that you could get two GH4's (on ebay, around $700 each) for the price of one GH5. I guess that would depend on if you have others filming with you and whatnot. I think it really depends upon what you're wanting to film. Like for example, what exactly would you do with the drone and how would it help your footage? If you think that you need landscape shots and what not, then it's probably best to jump down a level in camera for a decent drone.
Some other things to consider that you might need:

Another camera to consider may be the Sony a6500 for around $600 cheaper.

It's a great kit, similar to my own. The only weak parts are audio and lighting. As it stands you cannot handle an XLR port if provided, so if you ever work with an audio tech or at a venue that has XLR out for you for capture, you're screwed.
I'd upgrade your H1 to a Tascam DR-70 or even Panasonic's XLR mount for the GH5. The DR-70 will future proof you more IMHO.
Newwer lights are great to get started but they do lack when compared to pro-grade LEDs. I started with Newwer myself, and they all just end up breaking if you do indeed use them heavily. I really recommend Dracast and Ikan products.
This organizer for the 1510 is amazing, I'd pick one up if you don't have one already.
Cinebags AC toolbelt is really helpful for me on set, and adds a bit of a professional look to my warddrobe. Not for every job but it's nice to have and good way to store miscellaneous tools.
Lastly, I too own that davis and sanford tripod. It's a great piece of equipment, but really shines when paired with this Manfrotto Videohead. It's a huge upgrade.
The first question I'd ask is what type of shots do you want to get with the stabilizer? Even with the GH5's IBIS, one stabilizer may not give you the results you're looking for depending on the type of movement you want in the shot.
For example, if you're planning to walk with the camera, a chest-braced stabilizer like the Pocket Rig will not yield footage as smooth as a gimbal (or even a shoulder rig for that matter) because of how the part of your body bracing the rig (your chest) moves while walking.
On the other hand, if you want to shoot stationary medium-duration shots with tripod-like stability while still remaining mobile, a compact rig like the Pocket Rig may do the job well. At the same time, while these types of shots can be achieved with a gimbal, it's not the ideal tool because you're limited by battery life (in the case of a powered gimbal like the Crane), and even more so by fatigue from holding a gimbal, which doesn't have the best ergonomics for long stationary shots.
That said, even if your needs fall in the latter category, I still probably would not recommend the Pocket Rig primarily because the chest brace cannot be locked so it doesn't provide a solid base to brace against your body when you really need it. I've done a lot of searching and testing over the years, and if you really want a chest brace, the best I've found is the gunstock used in Zacuto's Target Shooter rig. They don't sell this model directly any more, but you can find it used from time to time.
The other issue with the Pocket Rig is ergonomics, as you still have to hold the camera body, but a vertical grip under the camera/lens is much more comfortable for remaining steady for longer shots. In fact, with the GH5's IBIS as good as it is, I've found a vertical grip to be even more important than a chest brace, so the aforementioned gunstock rarely comes along on shoots and I mostly use a comfortable grip and a couple other parts to make a quick-release micro rig to give me more comfort and stability when I need it. Here's an example of the rig, and here's an ongoing series of experiments and different setups with the rig. The nice thing about this rig is that it can be easily built up (with full rods for follow focus, matte box, etc.) or quickly stripped down as each shot requires.

The bag while I'm not using it is decent. The memory card is a good brand, good size and has worked just fine, no issues with speed. The sd card reader was surprisingly fast to download and quite small (a plus). The best part is the two extra batteries and charger. I love plugging it straight in the wall too rather than cords to connect. For the price of just a GH5 elsewhere I found it a bargain.
If you're just getting started, their products are good enough. The head has independent leveling bowl, the fluid pans move smoothly, legs and head are more than strong enough for your camera and lens. Have a cage and rails on one, so more weight still.
Their Pro Vista 7518B on rare occasions has fallen to $99 on Amazon, sometimes rises to as much as $400, though is usually around $150. A good value in the $150 range.

A bit rough around the edges (literally), had to file the sharp edge of the plate mount as it was so sharp it could cut. Only on one end though, the other had been smoothed in the factory.. As with most tripods, made of aluminum, so took all of five minutes to round off the sharp corners with a file. Well worth the savings.
Also converted it to arca swiss, as the plate mount it comes with is not standard. Coneverting to arca swiss is easy, buy a $13 arca swiss clamp and screw it into the D&S plate. Use cheap arca swiss plates from then on, which on ebay are as little as $3.
Once you have paying jobs and are using a tripod daily, you might consider something something better. Until then, in the sub $200 range, haven't seen much better.
I use a Smallrig cage. I like the way it goes the body and it seems very well made for the price. I use the xlr adapter on my GH5 so I picked up the cage designed to fit that.
