iFixit's probably your best bet, you can find their guide here. They also have the best batteries for the job. If you're going for the dual, might I suggest two 128 gb SD cards? It might save you a bit of money, as 256 was until recently the largest capacity card. See 2nd edit. Doubly unfortunate is that this is notoriously the most difficult iPod to work on, so good luck.
Edit: here's a somewhat cheaper 256 gb SD card.
Edit 2: Per u/Redbird9346
It's actually very easy. This Apple Support page says the following about the iPod Classic introduced in 2007 (6th generation):
The last three characters of the serial number will be one of these: Y5N, YMU, YMV, or YMX.
As /u/FreakyWays already listed the serial number, and it ends with YMU, it's a 6th generation version.
Also notable: on the 6th generation iPods, the serial number is engraved on the back, on a line by itself.
Ordered the 80gb iPod Video 5.5, for about $50 on eBay. It arrived in phenomenal condition with all OEM parts. Ordered 4x 256gb micro sd cards during Amazon Prime day (they were on sale for $30 each).
Below are some quick tips I have:
I’m with you. Have 2 iPod classics that function perfectly, no time nor patience to mod them. Instead I added a Fiio player with 2 micro sd slots for over 500 GB of lossless & high res files. Sounds fantastic!

What do you want to use bluetooth for? If it is to sync, you might be out of luck. If it is to transmit to speakers, try https://www.amazon.com/gp/product/B01B4W40VC . It connects to the 3.5mm port. I've used it quite successfully to broadcast from my iPod Classic to a car bluetooth.
Headphones.
AIAIAI TMA-2 with an over ear, less clinical, more musical configuration. Using a Bluetooth headband and a KOKKIA i10s transmitter.
The headphones sound great but the KOKKIA is not a very reliable bluetooth solution. I'm planning on doing an internal bluetooth mod once I've found the right transmitter to use.

Work great but you have to make your own length.
Skip the msata. I have the msata adapter, and at one point used a 1TB msata drive. The reliability was terrible and the drive constantly currupted.
Plus I needed this cable just to sync it with 130gb of music. The firewire plugged into the wall adapter, the USB plugged into the computer. Only then could it draw enough power to write 130gb of music in many hours of continuous syncing. I vote for skipping msata, and going IFlash quad. Easier, saves space for battery, and more reliable.
