I just use that attachment for dicing really. You get better results putting the cheeses in the freezer for like 15 mins though..

I am unfamiliar with that specific brand of part and whether it is legit or a knockoff (an issue on Amazon) but I've used this grease with much success. In general, you want a grease rated for food use. Just in case something happens and a bit gets in your food.

I bought [this part] (https://www.amazon.de/KitchenAid-Plastik-Schneckengetriebe-Scher-Gang-Standmixer/dp/B00F5ICTTW/ref=sr_1_1?__mk_de_DE=%C3%85M%C3%85%C5%BD%C3%95%C3%91&keywords=kitchen+aid+worm+gear&qid=1569110311&sr=8-1). I didn't replace the grease when I replaced the gear--the videos I watched all skipped this step! I used the old grease, which now it sounds like was a bad idea. Is there a particular kind of grease I should try for the next go-round?
