Removing the drawers is a bit different, but easy when you are used to their system. I only have one so far with my miscellaneous pieces by color.
I also have 2 of these Sterilite ones: https://www.amazon.com/dp/B000K7RK6A/ where the drawer is about 1 inch deeper, and a couple inches wider. But that stack of 10 on the IRIS is awesome. The cost per drawer is much better on the IRIS versus getting 3 Sterilites...
Honestly, I would go in a different direction. Those bins will buckle, making them hard to open.
Have you considered a drawstring playmat? A 5’ one like this will hold a few thousand pieces. Even if you have more pieces than will fit in one, I’d just get two. Playtime and cleanup are so easy.
Another, dustier option is a modular shelf system like the Ikea Trofast line. Even a rolling drawer cart like this should be easier to open and close, though again dust might be a problem.

I've never considered using one of them for storing the instructions, but I have to admit it seems like a good idea.

It's very convenient that way too.
Organized using Stanley 25, Stanley 10, Sterlite 1961, Sterlite 1962 and ziplock bags. In the Sterlites I have all my 2xX's, 1xXs, "slopes" (anything with non-right angles on it) and "inspiration pieces" (unique pieces such as tower spires and ship hulls). In the Stanleys, I keep all other pieces organized as specifically as made sense. There's still some further sorting I can do in those (e.g. all studs are together, not separated by color), but this feels like a huge win.
All depends on how much you want to change up your area. Something like this could do both display and storage while still looking very nice in a dining area. You could also do the cube shelf units and then use various containers for the pieces.
I use a large media shelf for displaying smaller sets and then regular bookshelves for modular buildings. I have a large industrial shelf that I use with plastic shoe boxes for pieces as well as Akro-Mills and Plano containers for the smaller pieces or the unusual pieces I don't have a lot of.
If it helps, what I ended up doing was doing a simple sketch of the room I prefer to build in and then drew in how I wanted to do storage. It helped me figure out exactly what I wanted for storage and display and how I wanted the room to look.

It really depends on how specific/organized you want to be, how much you want to spend, and how much space you have. It’s not all that bad of an idea to mix similar parts in one container to save space and money.
I went through a few options for parts organisers / storage bins around New Year. Does seem us Brits are slightly less gifted in this area than our American cousins ;-)
I’ve not found any parts organisers with exclusively medium-sized drawers. Typically you get about half the cabinet devoted to tiny drawers (originally meant for nuts, screws, or fuses, I think) and the remaining half to slightly larger drawers.
Another alternative is to make your own drawer system inside a standard cabinet. I’ve bought an IKEA Alex drawer unit (£95) for this reason, and am going to sub-divide the drawers into smaller compartments using foam board or similar. (Search for "ikea alex dividers" on Google to see lots of makeup enthusiasts using this technique to store their bits and bobs).

Then from there you can throw them in shoeboxes and get large clear containers eventually.
As I've recently started down the path of resorting by part rather than color, I too have found the usefulness of a search bin. Based on recommendations, I've picked up a couple of these funnel trays at Harbor Freight. Inexpensive at $3. Or you can go with a similar popular one at Amazon. The sides are not tall so easier to reach into and sift around than typical bins/trays. Then easy to dump back into storage container when done. They're not big so having a couple around is handy to dump out a bigger bin to sort/search through.
Yeah, im not entirely sure the final spot for all these, but if im building at my desk ive got these and just push my keyboard in.
