If it's legal in your state to do one party recording, you could consider getting a voice recording pen so you have 100% proof of her outbursts and in case she really does something insane.
Some companies may have policies prohibiting recording even if one party is legal in your state, but if it comes down to a situation where you get accused and might lose your job, it would be worth having a record of what happened.
I have used these in many situations at work under the guise of "taking notes", and I could easily say I forgot to turn it off.
