Audio engineer-in-training checking in here: it boils down to your mic. If you use a cheap mic, it's not going to sound very good. Also helps if you have a good wind filter over it (the black foam piece). I personally use these and they sound fantastic. Condenser mics are the way to go for vocal recordings, and cardioid pickup patterns help with a more directed pickup. You can effectively point the mic away from the wind, leaving the least sensitive part pointing down towards the wind (also, the "bottom" of these mics are less sensitive to low frequency sounds like wind noise, a bonus characteristic of cardioid mics).

Maybe a little info about the wired mic you used would help determine the root issue. But as far as recording with the SENA mic, you're not gonna get much good quality. I tried recording with mine, and using a phone to record sucks because it doesn't have the built-in noise-cancelling effect that the SENA uses when doing the comm function. Also, the GoPro has a compressor built-in that reduces the volume to adjust for the loudest sound it "hears" so if the mic is right by your mouth it'll squash the wind noise down to make your voice heard more easily.

Anyway, I use THIS and it works very well for what I need. Your welcome to check out my videos and see the quality for yourself. But for the price and ease of use I think its fantastic.
I think major distortion can happen due to your helmet and mic placement. But I was using a cheap mic and definitely noticed more wind noise before I switched to this mic. It sits right in front of my mouth now and as long as the mouth vent is closed you can just hear my engine and me when I talk.
You really only need one unless you're going to go all fancy and record your own POV and then have one pointing at you to cut in from, or swap between PIP views. Also for MicroSD cards, go big or go home. A 400GB Class 10 MicroSDXC card is only, what, $50 nowadays. Get that. It'll hold all your stuff forever and ever, so if you go for a long weekend ride and record every second, you won't need to dump your footage along the way.
I found that I never have the time for so much post-processing of the videos. Editing videos is time consuming. My time is a premium, and ask me if I'd rather sit and edit, or go ride? =) So, one chin-mounted camera does what I need.
I can highly recommend the Motoradd's mounts for helmet chin mounting, by the way. They stand strongly behind their products, too, I managed to break one and they had another to my doorstep for free within a week.
Yeah, I have a Olympus ME-51S and a JK® MIC-J 044 but I prefer the Giant Squid. The ME-51S is nice though too. I do have a Movo WS10n windscreen muff on it too.
Helmet is either my Bell RS-2 or Arai XD3.
