First things first, we need to know the actual product you're using. There is no "Ring Pro 2." There is either the Ring Video Doorbell 2 or the Ring Video Doorbell Pro.
They have vastly different power requirements, and one will be doable without much modification and a basic transformer and chime swap (the 2), and the other will be complicated and require modifications, possibly an electrician, and a way to cover them (the Pro).
If it's the 2, you can install a Nutone C915 16VAC@10VA transformer in the box where the AC power comes in (the Nicor box is split into two halves, high and low voltage). Be sure the breaker that powers the doorbell is off first. Then the wires just get swapped like for like to the wires on the back of the new transformer: black to black, white to white, green to green/bare. That would connect to the back of the transformer and it would screw into the high voltage side of the Nicor box.
Then, with the wires leading to the button, you would connect one of them (doesn't matter which) to one of the transformer yellow wires (again it doesn't matter which) with a wire nut and tuck it into the low voltage side of the Nicor box. Then you'll have one button wire and one transformer wire left, and those get connected to a basic mechanical chime. Connect the yellow transformer wire to the trans terminal on the chime, and the other button wire to the front terminal on the chime. Then you mount the chime over the whole Nicor box and new transformer, covering it up, being careful to ensure the yellow wires don't get pinched where they run from the front of the transformer over to the other side of the Nicor box. All the mechanical chimes (per brand) are the same inside, and generally all that's different is the cover. You may need a slightly more expensive chime with a larger cover to completely cover up the transformer and dual box of the Nicor. I recommend going with a Nutone (or Braun, it's the same company) for the chime too. Avoid Hampton Bay and Heath/Zenith, as they're low quality and fail frequently and tend to hum while the battery in the doorbell is charging.
If it's a Doorbell Pro, well, it's not going to be easy. It can't go there and meet code still. The 16VAC@30VA transformer that the Pro requires is way too big for the Nicor box and can't just be mounted in the wall. It would need to be wired somewhere else that meets code and new wires run from it to the existing Nicor location. Not fun or easy or cheap. There are two other options for powering the Pro, though with either you would have no mechanical chime, so you'd have to use a Ring Chime (or Echo devices or the Ring app alerts) to have any sort of notifications at all.
Option 1: Ring sells on their website, not on Amazon, a plug-in transformer for the Pro. It cannot be lengthened or connected to other wiring, you plug it in and run the wire to the Pro, but this will require drilling somewhere to get the wire to the Pro.
Option 2: Replace the Nicor high voltage side with an electrical outlet and buy a cover plate with one blank side (like this) and [one of these plug-in https://smile.amazon.com/MG-ELECTRONICS-MGT1640-TRANSFORMER-40AH/dp/B001DPNQ0M/). You'll also need about 12" of 18ga SOLID NOT STRANDED bell wire. It can be more than 2-stranded if you use thermostat wire, for example, which generally has a sheath on the cable but comes with 2-6 wires depending. Sheathed cable will look better, and if you can find white, even better. Your local home center should have it. You can use just bell wire too, which is generally just two wires twisted together and are different colors, but the sheathed cable will look better. Your local home center will have a variety but make sure it's solid core and 18ga.
You mount the outlet into the high voltage side of the Nicor box. Drill a hole in the blank side of the cover place where it looks nice and is big enough to pass through the wire you're using. Strip both ends of the bell wire to about a half inch. Do the same with the button wires. Attach one of the leads of the wire you're using to one of the button wires with a wire nut. Next take the Pro Power Kit v2 and peel off the tape to expose the bypass mode holes on the long edge opposite the two black wires. (You won't use those black wires. Just leave them there.) Take the other button wire and push it into one of the bypass holes on the power kit and make sure it goes in all the way and tug on it to make sure it's seated and the clamp is biting into the wire. Do the same with the other conductor of the bell wire—insert it into the other bypass hole. Now pass the bell wire through the hole you drilled in the wall plate, and drop the Pro power kit and wiring into the low voltage side of the Nicor box, and affix the cover plate over the outlet and empty space. Connect the bell wire to each of the two outer terminals on the transformer (again doesn't matter which is which, just use the outer terminals if you happen to get a 3-screw model) and tighten the screws. You'll need to remove the screw meant to hold it in place, since your outlet won't have that hole. The orange washer just pulls off and the screw comes right out. Then plug it in, turn on the breaker, wait for the Pro to charge up and indicate it's ready for setup and begin setting it up. Once you know it works, I'd recommend a strip of 3M command adhesive behind the transformer just so it can't fall out since it's heavy and you can't use the mounting screw on that style outlet.

I’m hoping to use a Ring Retrofit Kit with my existing PIR motion sensors. Anyone know a reason why I couldn’t use a power supply like this to power the PIR’s but then run their trigger leads to the Retrofit Kit?

Ring $100/yr and save an extra $20. The Ring Pro is solid, they are now in a 3gen for it which I just received 2 days ago as a replacement. (Old Pro was marked as needed replacing by ring for some reason). To do it right make sure you have the right transformer. Ring offers one but you can find a NuTone on Amazon a bit cheaper. .
The Alarm is solid, zwave+ platform (also zigbee) and don’t forget to get the smoke alarms so you can print out a full cert to give to your home owners for a discount on premium.
Within the last few days, Amazon alexa released the Guard update turning all your echos into smoke/co listeners and glass break detectors. IMO, it was the last thing missing from the ring alarm.
The issue with the pro is running the wrong transformers to power it. My 1st pro lasted 6mo, 2nd 1.5yrs and now I got my 3rd which has a slight different build, they also included 2 angle wedges with the unit.
The smart lock thing is slick, just make sure to visit their site to see which is compatible.
Lastly, if you’re going all in with Ring, stay away from battery cameras and invest in a mesh system that has triband and mu-Mimo to prepare you for the future of IOT.

No, they will still recommend a higher one as soon as you have any issues.
I had the 10VA at first and it seemed to work fine, but eventually it seems it affects the internals of the unit causing issues.
I'd save the headache and get a new one.

That's weird that your transformer doesn't show a voltage rating. Are you sure you're looking at the right thing?
I think you're on the right track. I've been searching for mounting block covers for siding and came across this.
I'm not 100% sure it will work simply bc of the position of the existing box and the way that cover is designed to fit over the siding. Seems like the current junction box wouldn't be centered under the cover. But at least I feel like I'm on the right track.

I think the best option, in terms of cost-efficiency, would be to get the ring doorbell 2 on amazon with the 10$ Amazon Echo Show sale and then a ring camera with the floodlights and the free echo dot. The doorbell would go obviously where your old doorbell was and then the camera would go above the middle of your garage. The floodlights come on whenever they detect motion, so it’s great for deterring crime in the middle of the night.
I would also recommend getting black colors for both, the doorbell comes with both a silver and black plate, so you can customize it when it gets to your home. The black versions are almost impossible to see in the nighttime if someone was looking to steal them or check for cameras. Links to both are included below.

Do you already have an existing hardwired keypad with wires? If so, I used an adapter on one end (my wires terminate in my basement) like this one . I used a MicroUSB converter on the keypad end. You might need to make the existing hole larger. I used something like this.

The power pack is designed to run power directly to the doorbell and bypassing the chime (so the power doesn't have to run through the chime first and risk burning it out). At 12 va, you don't have enough power. You need to replace your existing transformer with a more powerful one. If you are slightly handy, it is an easy replacement, especially if you have access to it. Just turn off the power first.
This new transformer will allow the device to be powered and allow your chime to complete a full ding-dong cycle. I had an underpowered transformer (16 va). The device would stay powered, but the mechanical chime either didn't work or wouldn't complete a full ringing cycle.
I have the Pro set up as well. Looks like what was happening when I set mine up. Come to find out that since I had it at an older house, the doorbell transformer wasn't strong enough and causing it to 'reset' since it would drop power and 'reconnect' back to power. It was only a 10VA transformer. I read it somewhere on some forum that you need to make sure your doorbell transformer is around 30VA. I bought this one off Amazon, installed it and have not had any issues since. The flashing typically means it's in setup mode waiting to connect (even though you may have already connected it once before).
That's a good hack! I didn't realise Home Assistant was able to react to the alarm event from Ring. That's good to know.
Is that the one? At 120 dB, I wouldn't want to be near it when it goes off. I'll probably buy the same, assuming I can find it in Europe.
Check your doorbell transformer. We had a 16V 10VA when I first installed the Ring Pro and was getting video issues and the mechanical bell would barely ding (not full ding dong; we have 2 mechanical bells).
Replaced the transformer with a 16V 30VA (from Amazon) and it's all good now.

It is wired to a 120V line, then sends 16VAC down two wires to the location of the doorbell/Ring Pro. That would be the most straightforward solution if you want to utilize Ring Chimes instead of doorbell chimes inside.

It's loud don't get me wrong, but not loud enough in my opinion. I plan to get one of these bad boys and hook it up to wifi switch I can turn on and off remotely
THANK you u/hot_java_cup for your very in-depth response! I purchased another Ring Doorbell Pro from a different retailer today and SAME problem, even after adding the Ring Chime Pro. However, as per Ring support’s recommendation, we tried connecting it to a hot spot from our cell phone and bypassing the Chime Pro and had a much different response (right flashing white light) and I believe this is because our cell service signal is very weak at our home (1-2 bars) so I’m convinced it’s a router problem.

That's a square version of what you just posted. And I was just typing this out when you replied to the other poster.
And I know the spot it is meant to butt up against the siding and fall into the overlap space probably won't line up exactly, but snipping the protrusion off would allow you to cover the box. You'd need to come up with some gasket material, like thin weatheratrip tape to line the perimeter of the box edge where it meets the back of the cover, but then with it compressed between the light and the box, it won't move. The gasket is since you won't be touching the siding, so you need your own gasket.
And I didn't suggest the square cover above but was about to post this same one you were on but square when I saw your reply. And that's the weirdest light box I've ever seen, making finding an exact cover for it difficult due to the odd screw layout (since it's basically an octagon box turned into a square, putting the screw holes in an odd place for a traditional cover).
Updating this... I've installed the new transformer recommended by pandaman1784 ( https://www.amazon.com/NuTone-C907-16V-30VA-Transformer/dp/B001POBN92 ) and I do get 18-20VAC from the door bell wiring behind the ring when measuring but looks like the ring pro has a pulsing white light... rings the internal chime, setup button still has no effect what so ever and if I push the door bell the white light goes out completely after the blue circle and then after a few seconds to a minute goes back to a pulsing white light (Reboot?).

At this point figured I'd wait it out maybe 30mins see if it does anything different with the extra voltage and if it's still behaving funny take it back to the BestBuy and exchange it? Any other ideas?

New one had a ground wire but I also had no ground point so I capped that off, old had no ground wire.
UPDATE 2: Got impatient, exchanged it... worked just as well as the last one was able to link it to my ring account get it connected on WiFi etc. The only issue I have now is Live view showed a black screen and then I started just getting "Streaming Error" after that with no live view and no motion events or etc... could have swore after connecting the first one the motion events were almost immediate and I'd get the notifications in the app; guess this kinda warrants a separate thread though as it's no longer a low voltage issue/confirmed that even though I had low voltage the other one seemingly was damaged.
