If you are looking for something comprehensive send her a link to Wookieepedia instead. It's far more complete than any printed encyclopedia, contains both canon and Legends information and it's constantly being updated when new things are released. It's a lore geek's best friend.
As far as the gift goes, you could still get her that Visual Encyclopedia because it's got lots of really nice pictures. Alternatively, Ultimate Star Wars, The Complete Visual Dictionary, The Force Awakens Visual Dictionary, Rogue One Visual Dictionary and the Character Encyclopedia are all good books that have a lot of great info in them. You could also go with the Complete Star Wars Encyclopedia, although it's no longer complete and much of the information is no longer canon.
Whatever you pick, make sure it's from the heart and I'm sure she'll like it.
In the book The Illustrated Star Wars Universe there's an in-universe non-fiction essay about the planet Alderaan and its culture. They go into nerf herders a little bit.
It's actually a fantastic book. I totally recommend it. The stories are short but fun reads. Each is a sort of travelogue of a different planet; Bespin, Corruscant, Tattooine, the Forest Moon. The best part of it is that it's chock full of Ralph McQuarie's beautiful concept art.
Shatterpoint pretty clearly shows Mace has been through the orbit of the dark side more than most jedi out there. Also, even if those novelizations are not cannon, they can still take character development inspirations from there.
The Revenge of the Sith novelization also built up Mace pretty well. Read up - they are a much better composed story than the movie.
Below are my recommendations (in no specific order)
If I had to recommend one book over any other, it would be Guardians of the Whills. It's amazing, I've read it twice this week.
I definitely like Kylo more than Rey. I'm super HAPPY with the entire cast including Rey. But my heart has always been with the bad guys. I knew I was going to love Kylo the most the moment I saw him. In fact the moment I saw him I looked at my boyfriend and said "You're costuming that." like he didn't have an option, I'm making him a Kylo and he's going to be mine and that's that!
But I LOVE the point you brought up that this movie really makes you sympathize with the bad guys and I loved that. You feel for Finn who is freaked out by the power and cruelty of the first order and you actually feel for Kylo who is struggling between light and dark. Watching the promos and getting hyped, I never imagined I would feel for Kylo. I assumed I'd sit there and think he was amazing but I didn't think I'd connect with him, it was actually kind of nice! I'm circle jerking, I know, I can't help it.

But no seriously that Darth Vader comic. The stuff that happens. UGH. NERDGASM. After reading them and re-watching the movies in preparation for TFA I fell in love with the originals all over again. It was like that fresh awesome new love I had for them the first time! So good!
Okay, I know you were just making a reference, but if you like Shakespeare and Star Wars check this shit out. It's the entirety of A New Hope painstakingly translated into iambic pentameter, oftentimes practically line-for-line, with a few beautiful soliloquies thrown in for good measure. It was done by someone who's obviously a huge fan of both Shakespeare and Star Wars, and if you are too you'll love it. I believe he's done Episodes IV, V, and VI, although I've only read IV. Can't recommend it enough.
My personal favorites (although note, neither are canon anymore):
1.) Shatterpoint: follows Mace Windu, and is essentially Star Wars' take on Heart of Darkness.
2.) The Thrawn Trilogy: Widely hailed as the best of the Star Wars EU. In my opinion, it has some of the best and worst elements. The good: a brilliant, nuanced antagonist; the bad: evil clones (a terrible subplot).
I haven't read it yet, but Lost Stars has been very well received (despite being billed as a young adult novel). I'd recommend it if you'd like a new canonical novel.
The other versions are pretty awesome. I bought the Book of Sith vault edition a while back. So worth it.

You can read [Lost Stars] (http://www.amazon.com/Journey-Star-Wars-Force-Awakens/dp/1484724984) it's a book about 2 people that grow up together, go to the Imperial academy, and one deflects to the Rebellion. Goes through the entire original trilogy from the new character's perspectives. It's a great read, one of my favorite from the new canon.

Are you aware that this novel just came out in October? In addition to that, Ashley Eckstein and E.K. Johnston are co-authoring a story for From a Certain Point of View that will almost certainly be about Ahsoka. If that wasn't enough, she will be the focus of one of the animated shorts for Forces of Destiny.
Ahsoka Tano is alive and well in the eyes of Lucasfilm/Disney.

I didn't watch any Star Wars movies until like 6 or 7 years ago (I'm 24). Since, I've watched the movies through like a zillion times. I became obsessed with the psychological transformation Anakin went through to become Darth Vader. I'm reading my first novel: Dark Lord: The Rise of Darth Vader. In the recent Ahsoka book there is some Bail/Obi-Wan related discussion that to me implied a greater connection between them, now that the majority of the Jedi were wiped out and they are two of the only people that know the truth about Luke/Leia.

The Jedi Path An in-universe textbook for Padawans with a lot of inserted media like the napkin Obi Wan sketches his Saber Design on and notes written in the margins from the book's previous owners starting with Yoda, and passed down from Master to Apprentice until it came to Luke Skywalker

I'd highly recommend this book. It's one of my favorite Star Wars books ever. This combined with Labyrinth Of Evil make you appreciate RoTS so much more. You definitely won't watch episode III the same way again - much how Rogue One changed episode IV for many people. I don't care what they say this series is still canon to me until proven otherwise

"The New Essential Chronology to Star Wars" is a relatively informative and simple book to read for info on the ancient history. It is only a chronology, therefore third-person and no plot, but it helped me to understand a number of series a bit more clearly.

There was a Legends book titled Kenobi which is exactly this - based on Tatooine not long after he first arrives after the events of RotS.
Its one of the better EU books - no super weapons, so villians, nothing silly or outrageous. A few people have called it "a Star Wars Western".
I recently finished Lost Stars, by Claudia Gray. It's a 'new timeline' book (not EU) and also one of the better Star Wars books I've read.

I was interested in this until I did the "Look Inside" on Amazon.
At Scene 2 it has the rebel that Vader chokes out saying the part of the Imperial Officer who tells Vader that they can't find the plans in the main computer.
They couldn't even get to page 2 without messing it up! I can only imagine it has more errors like this.

This is from page 66 of The Art of Star Wars: The Force Awakens, which chronicles the development of the story and characters throughout pre-production.
I personally think this would have been a more interesting and unique purpose for Starkiller Base, which would have spared some of the comparisons to the original trilogy. Imagine if the climax of the movie centered around rescuing an entire system of planets that had just lost their sun and were sent hurtling into dark space.
And until Disney releases anything that dispute what is legends, i consider it still canon.
Get him the hard back cover to the book Lost Stars. It is currently the highest acclaimed Star Wars book out. He'll thank you with every chapter.

I don't have it so I don't know, but perhaps in the TPB instead of listing the last unit as "6" at the bottom of the page, they list "Epilogue", which could be the mistake on his part thinking it's just a continuation of "5", but that's just speculation.
They actually released two complete collections all the books. One for the vehicles, and another for the the locations. There was also a later one for the Clone Wars TV show.

I don't know if these are the official dates, but the first TPB's for all current Star Wars comics are already available for preorder on Amazon.
The limited Princess Leia series (5 issues, I think) seems to be available September 15 as a TPB.
Star Wars Volume 1 also has September 15 as a release date for the TPB.
Darth Vader's first TPB looks to be available October 20.
The upcoming Kanan: The Last Padawan series seems to be available November 3 as a TPB.
Also, I've just noticed that if you click on one of these comics, under "customers who bought this item also bought" there are a bunch of Journey to The Force Awakens books available for preorder, I thought "Aftermath" was the only one.
There's a blu ray collection of the movies that contains 40 hours of extras in it. Its about ~$90USD right now and I already have all the movies on blu ray and wish to buy the extras but without buying them again. It says there's "3 bonus disks" here:

The Revenge of the Sith novelization by Matthew Stover can give some clues on this, if you are willing to accept it as canon, too.
The first point is that, in the book, Yoda blames himself for the destruction of the Jedi Order. He sees it as his own personal failure, and specifically his failure in not teaching "the living Force" as Qui-Gon did. This comes from a scene that was originally going to be in Episode III but was ultimately cut and now is only in the book (or you can watch the unfinished version of it in the deleted scenes portion of the Blu-Rays). In that scene, Qui-Gon contacts Yoda through the Force and teaches Yoda how to survive death in spirit. There's still a hint of this scene in the film when Yoda tells Obi-Wan he will teach him to communicate with Qui-Gon as well.
So, in other words, Yoda doesn't trust his own teachings anymore. He feels they ultimately failed the Jedi and he is no longer the teacher to create the new Jedi order that follows the living Force. He goes into retirement, studying how to become a spirit like Qui-Gon and maybe over time influence events after death. That's mostly his plan at least...until The Empire Strikes Back, of course.
Second, as to Luke & Leia: Obi-Wan actually wanted to have Luke & Leia trained in the Force, especially to make up for the failure to train Anakin properly. But Yoda forbids it. Here is the relevant exchange in the book:
>[Obi-Wan:] "I can take the boy, Master Yoda, and you take the girl. We can hide them away, keep them safe--train them as Anakin should have been trained--"
>"No." The ancient Master lowered his head again, closing his eyes, resting his chin on his hands that were folded over the head of his stick.
>Obi-Wan looked uncertain. "But how are they to learn the self-discipline a Jedi needs? How are they to master skills of the Force?"
>"Jedi training, the sole source of self-discipline is not. When right is the time for skills to be taught, to us the living Force will bring them. Until then, wait we will, and watch, and learn."
So here you have Yoda already implementing what Qui-Gon is now teaching him: to let the Force decide the shape of things to come, rather than stick to the old ways that, in Yoda's view, ultimately failed the Jedi. Edit: This might also be why Obi-Wan makes no moves to train Luke, either, at least not for a while. Only when the living Force brings Luke to him after the Sand People attack does he think maybe it's a sign to move toward it. Which makes the scene in the novel still fit.
All of this makes sense to me, but again you would've had to have read the novelization of Episode III to get most of this.
