To be honest, there's no way to really do this without either buying a capture card or having someone else that does do it for you.
This is because games like COD or Halo that record gameplay don't record video but instead record actions done by players and kind of replays itself in-engine. They do this because you can record an absurd amount of matches without using almost any hard drive space and because it uses almost no resources for the game to record like this.
You can get a really cheap capture card for USB if you don't mind standard definition and it will work easily on even older laptops.

Pick one and use that instead of a pc, just kidding, but seriously listen servers are awful for any kind of pvp game especially fps games, I have no problem with matchmaking on dedis like csgo, but fuck me if I have to play cod again on listen servers. (Oh and I know you said dedis+ matchmaking, but separating an already small userbase is never a good idea)
I'm curious though, why do you want matchmaking? It can't be the party system because that works on dedis as well, it can't be that it's easier because it's not, you can easily find a server with whatever gamemode you want if you don't care about the connection which you obviously don't since you want to play on listen servers. Afraid of getting kicked by admins? True, that is a problem, but that can easily get fixed by actually using the favorites feature that every good server browser have.

Don't buy a headset, they're shit.
Go with some decent headphones, probably either this or this (or if you want to go cheaper this which will still sound leagues better than any $200 headset) as I know they both have good soundstage.
For mic, get a Modmic which is $30 and will have better voice quality than most $200 headsets.
Now to connect it to your 260 you need an adapter which luckily Steelseries makes a nice one.
If you still really want an all in one headset though, go with an Astro they're still a bit pricy but at least they're not shit like TBs are.
Indeed it is Elgato HD is used by most of the Call of Duty YouTuber's like AliA, Syndicate, and Tmartn. Elgato is rather amazing because it has a built in editing software (within the recording software) I'm actually planning on trading my Extreme cap u3 in for one soon.

Even if xbox has only an USB port you can use an extern USB soundcard with 3,5 mm ports for 2$ or even less.

I use Logitech F540s. I wanted a wireless headset when I bought them since I sit like 3-4 feet away from my TV and got tired of having a long cable in the way. They work well enough, but I think I'm gonna get a pair of SteelSeries Siberias the next time I need a headset, but that probably won't be for years.
