Did you re-layout the text for the rulebooks or just let it scale down to the 8.5x5.5 size of a half-folded letter size piece of paper?
I use 70# Text, Whip Cream from french paper for all of my double sided interiors. This weight has a great feel and is still foldable for printed zines / rules.
I use this for my covers Neenah Paper Astrobrights Cardstock.
I also just fold manually, and carefully both forwards and backwards to create a good spine. I use a normal stapler and open it up, and staple on the floor into carpet/rugs, and then bend the insides. Mostly I'm just too lazy to get a longer stapler!
5e has a starter set that is much cheaper on Amazon.
