Ingredients

  1. Preheat the oven to 350 F. Prepare a 9x5" baking pan with parchment paper.
  2. Place eggs, vanilla extract, sugar, pumpkin puree, maple syrup and canola oil in a standing mixer and blend until smooth.
  3. In a large bowl, sift together the flour, baking powder, baking soda and spices.
  4. Fold the dry ingredients into the wet with the chocolate chunks
  5. Transfer the batter into the prepared baking pan and smooth into an even layer.
  6. Bake at 350 F 35 minute or until a toothpick can be inserted clean.
  7. Cool the bread in the pan after removing from the oven for 15 minutes. Then remove from the pan and let it sit another 60 minutes before slicing and enjoying. (I like to microwave leftovers to melt the chocolate chips)

One more thing: I was actually inspired to make this while reading When French Women Cook, which is a super awesome book I’d recommend checking out. There is a fig tart recipe in there but it uses whipping cream flavoured with rum and I wanted custard so I adapted 😂

Like you said - pretty messy but I bet it tastes good! I think investing in an angled icing spatula would help you get the layers more smooth and even.

I just used a standard cheesecake recipe and added in my own extras to make the different types. And cooked them at 325F for 15-17 minutes.
