That one is actually HDMI to VGA but that is the sort of thing I was thinking. This is the one I was going to try. It looks like it should do what I need without loss of signal.
I still want to be able to play directly on the monitor for that computer so I was going to try this splitter box with one going to the converter and the other going to my monitor.
Both are powered so there should not be much loss in signal.
You could look at the GPD line of handhelds -- these are modern x86 boxes in a handheld form factor, so they'll be expensive, too, but can also be used in place of a modern laptop. They've also got less expensive models targeting industrial applications, which should still be good for DOSBox, and the original version of the GPD Win is also a bit less expensive than the current version.
On the cheaper side, there's the PocketCHIP, which is an ARM SBC bundled with a handheld enclosure, which should be able to run DOSBox under Linux decently enough. The manufacturer shut down, however, so these aren't likely to be available new for too much longer.

Are you trying to capture video? It really depends on your setup.
If you're running a genuine old DOS pc, you'll need a capture card with a VGA connection and another modern PC along side.
If you're running a modern PC and playing DOS games through DOSBox, you can use something like FRAPS to capture the footage like any other game, or the built-in video capture function of your video card.

You can pick up one of these compact flash adapters, and use an ordinary compact flash card as your computer's hard drive. If you want to copy anything over to your retro PC from a more modern system, just turn off the retro system and plug the compact flash card into a USB adapter, dump whatever files you want over, whether it be Doom or Duke Nukem or what have you, the plug it back into the retro PC. No having to deal with floppies or anything like that, although using the original media certainly has it's own charm to it.
As far as authentic hardware, get an 8088/286 or a 386 with a turbo button. Optionally there are some DOS utilities that purposely slow down the CPU for games that run too fast, such as MoSlo.
A lot of vintage DOS PC enthusiasts still use floppies, but since old hard drives are hard to find and expensive these days it seems like most people are using either Compact Flash-to-IDE adapters or homebrew hardware such as the XT CF Lite. Once you install the OS onto one of these you can just remove the CF card and copy whatever you want to it from a modern PC, then plug it right back in the old PC and be good to go.
I've been trying to archive all my old floppies to disk images because they're finally reaching the point where a lot of them are going bad, especially the 5.25" disks.

I didn't even know such specialized gamepads existed. Those both look very much like something I would want, and considering I'm getting Killer Instinct when it launches on PC in a couple of months, it may not be a bad investment. Certainly cheaper than the arcade stick I've been eyeballing.

It's laborious as I'm current in the middle of using a kyroflux to make exact magnetic copies of all my old dos floppies for the exact reasons you mention. But also in the interim I'm using one of these in my vintage PCs since my actual vintage HDs are only 50 and 20MB in size (so picking which games to keep installed is tough)

This disc had some creative shit on it. The ones that came after it were just full of filler and bullshit.
For the Record, this was put on by Valusoft and the proper disc (IIRC) should have a sillouhette of a racecar and a bowling ball & pin.
