Everyone is different. For me, the surgery was not a big deal at all. Once I left the hospital (the day after surgery), I was fully functional and able to do anything I wanted. I followed my surgeon's instructions for food/liquids. Follow your doctor's instructions, not what everyone on the internet did/says.
The surgery is just a medical procedure. You'll be fine. If you have a lot of concerns/issues, talk to your care team. If you are having a lot of anxiety talk to a therapist.
As far as my personal experience, I was on clear liquids for a week. Then I was on any liquid for 2 weeks. Then soft foods for 4 weeks. Then back to 'any food.'
I didn't have any issues with vitamins or liquids but again, everyone is different. I did have issues with the Premier Protein shakes. The Whey Concentrate was not good for me at all. I ended up switching to Vega Sport and it was great for me. Again, everyone is different.
The only thing I personally recommend is this soup: https://smile.amazon.com/gp/product/B004OOU0KS/ref=oh_aui_search_detailpage?ie=UTF8&psc=1
It tasted really good and it had protein in it.
Anecdotally speaking, getting in your protein right after surgery is one of the most important things. Right after surgery I drank that soup and a lot of the clear protein drinks.
Aside from that, I recommend start doing any type of exercise just as soon as you are allowed such as walking...but really... any allowed exercise.
The great thing about prep after surgery is the small amount of food. More fits into the fridge. You cook once a week or every 2 weeks and just heat it up.
Get some containers you can microwave. I bought some cheap containers on amazon with compartments so the stuff does not mix (in case of souce/gravy) or invest in some that last longer. These
The first time I prepped I made some meat plus sides of cauliflower and broccoli. It started to smell badly after day 4 in the fridge so I had to throw it away. I should have frozen the food and not just used the fridge. I think if you don't eat it in 3 days you should freeze it.
Perfect for prep is shredded chicken (or beef or pork) or meatloaf or steak (cut in very small pieces). The shredded chicken you can mix with all kinds of tastes like teriyaki or curry... whatever you prefer. It all heats up nicely in the microwave.
Stews or soups are good too. Instantpot is your friend. I use mine for all the meat or vegetables. Especially in the beginning you need as moist food as possible. Dry chicken will not sit well and if it is in a stew or with some liquid it works.
Some stuff is just too much work to prep. I make them fresh like eggs for breakfast.
This is how I started but I got lazy. It is a lot of work to prep for 2 weeks. That whole day is gone.
So... What I do now... And that is just me. I have small 5 oz plastic cups with lids. I put the meat in there and freeze those. Or I make little meatloafs (8 loaf sheet pan) with turkey and freeze those. Vegetables I buy now in a steamer bag (I got too lazy to prep vegetables) but one steamer lasts for 2 meals. And when it's time for dinner or lunch I just grab one meat item and a steamer and am good. The meat container I have already calculated and added to MyFitnessPal App. One click and the diary is done.
Variety is important or it gets boring. And... All this is for the stage when you can have all foods. :-)
I hope you did not want to prep for the whole family... That would be soooo much work. I am single so it is easier but really... Instantpot.
(sorry for the unstructured answer but I just wrote what was in my mind and that was not in any sequence.)
When I was on a Very low carb diet before, I found these products that are great on the go for working out that just mix easy with water and taste pretty decent. It breaks the monotony of having to make a thick protein shake all the time for an extra source of protein for muscle building. One pack is 70 cals and 15 g of protein (very low sugar). You could probably have three a day for about 50 extra g of protein without having to think about it and get your fluids/water in at the same time. It's Proti-diet gel packs they come in a lot of flavors the Peach mango, Kiwi-Melon and Grape were my favorites. You get 7 to a box so if you are having multiples per day it can get pricey but it was worth it to me and subbed for other snacks. I will be using these a lot again after my surgery I'm sure. Good luck!
I drank these during my liquid phases and actually just had one. They're really good. I've only tried the chocolate flavor.
These are really good in a pinch. I find they're best if you put them in your blender with ice and make a smoothie. The package implies you can drink them straight but they're like syrup.
Please, read "Brain over Binge" twice. Start from Chapter 10 on the re-read. There is no easy cure-all, but this should help. All power to you my friend.
You can carry a card in your wallet that explains your situation and let's you order from the kids menu or great idea a side dish like you suggested! My nurse gave me one.

My high weight was 406, SW 375, sleeved 2/25/19 CW: 345; the tough part for me was the soft food and regular food stage, as I could incorporate more foods into my diet I started putting in some of the bad foods from my past. I could eat clean for 11 of the 12 waking hours of the day, but that last hour I would slip up and have a high calorie low nutrient food.
Good luck on getting to the scrambled egg stage, I will try some of those roast beef wraps. I don't crave carbs, but for whatever reason I might eat some carbs (at dinner with family) and eating carbs makes me crave more carbs.
Your body and brain are going through heaps of changes - take all the help you can get and more - make it as easy on yourself as possible. Especially if you feel that familiar slump. See your doctor. Ask for counselling. Just know that how you feel right now isn't forever.
Can wholeheartedly recommend SAD lamps too ( https://www.amazon.co.uk/dp/B07XGQLFD7/ref=cm_sw_r_other_apa_i_rsmWDb9GKP4VH ).
They're small, about the size of a Kindle and as sceptical as I was, they definitely work some kind of magic on me. Helped me get out of bed for a start.
It’s actually called an abdominal binder. I must have made up “belly band!” Got mine from amazon and it’s really helping.

I got the most use out of these. Semi-disposable, but I'm still using some of them a year out, so that's not so bad. They're 4 oz. rather than 3 oz., but you'll be there before long anyway.
I also used the little 2 oz. jello shot/dressing containers you see everywhere. They're much less reusable, but it's a handy size to have around in the early days.
Been using this one. https://www.amazon.com/dp/B00JREK09G?ref=ppx_pop_mob_ap_share
I think Biotenehas been listed a must-have after surgery on various posts and lists around here.

My labs have been pristine. I’m going to get the ones with less iron next time though.
I feel your pain, I am on a 600 calorie diet for 15 days. No solids, only liquids. I can have about 4 protein shakes and then I got these things called BariWise broth mixes. I have beef, chicken and hot chocolate mix. I have about 2 of them a day. All are around 70-90 calories a piece, but also have about 15g of protein in them as well. I am 360 currently and my biggest worry was not having a good amount of protein. But all this helps. The taste isn't great but it's not terrible either.
