The detonation is an explosive decomposition, and as you can see it's ridiculously shock-sensitive. This is a popular demo because the synthesis is easy, but it can also be very dangerous. I'm not going to give you the recipe--you can look that shit up in Shakhashiri yourself if you've got any business doing this--but I am going to pass on some safety tips:

IF YOU'RE GOING TO TRY THIS:

  1. Nitrogen triiodide is much more safe to handle when wet with ammonia, but it has been known to detonate even when wet, so NEVER MAKE MORE THAN A GRAM OR TWO AT A TIME--any more than that and you take a small but real risk of being blinded or losing fingers.

  2. Make what you're going to use WHERE you're going to use it. NEVER attempt to store this chemical, even when wet. If you put it into a sealed container you have just made a bomb that can go off unpredictably at any time!

  3. Those cool purple clouds you see are Iodine gas, one of the decomposition products and very nasty shit if inhaled. Aways set this up where there is good ventilation, preferably in a working fume hood.

  4. CLEAN YOUR GLASSWARE RIGHT AWAY - rinse any residue off your glassware and stirring rod off onto the filter paper containing the crystals you're going to let dry. By now you should realize why it's a bad idea to let this shit dry out on glass!

  5. It'll leave iodine stains around the area where you detonate it--these can be cleaned up with a dilute solution of sodium thiosulfate.

Edit: added a link to Shakhashiri's handbook of chemical demonstrations, aka "The Bible" to us chemistry nerds.
