The trick is lots of diffuse lights. I suggest you get a couple of LED soft boxes and place them both 45 deg off centre from the build plate. Lots of people think they have too much light when using strobes or boxes but in reality you're fine if you use the right shooting settings on your camera and more light is usually better. You can tell when diffuse light is being used as you avoid hard shadows.
Beyond that setting the scene helps a lot too - make sure your camera isn't too tight or too wide and get a clean backdrop that isn't distracting. You could even go so far as to buy a sweeping backdrop in white (or green/blue screen if that's your thing).
I believe you can also make octolapse trigger an external camera which would up the quality massiveness as you can control the aperture / shutter speed / focal length etc much better.

The thing that REALLY confuses me is that you are having trouble when not connected to the printer. I could imagine some ways that you would have failures during a print that are related to serial communication issues, but nothing obvious should cause these kind of random lockups. I've been using this build since the day it was released and have never had a lockup, so something else must be going on.
That leads me to one of the following possible issues:

That kit is overkill if you are just running Octoprint and don't want a case. All the Pi needs is a power supply cable (for power, obvs), an sd card (which operates like the Pi's internal storage like an HDD/SDD in a standard computer), and a USB cable to connect to your 3d printer. This is assuming it is a Pi model that has a wifi antenna built in (all models after the Pi 3 B+ have this standard) otherwise you will need a wifi adapter or an ethernet cable to connect to your access point.
Outside of the Pi itself, you will need an sd card reader to flash Octoprint to the sd card.

For Octopi (Pi running Octoprint), I bought a stock Pi 2 B+ and an 8GB micro SD card. Scavenged a microUSB charger from a deserted phone (anything as long as it's a 2.5A power supply). I had an SD card reader already, and a random microUSB-USB cable.
If you're going to run Octopi, you might already have access to a 3D printer to print your own case. You might consider a $5 USB webcam from a thrift store.
GPIO layout is easy enough to find on the internet - the amazon kit doesn't actually give you anything actionable for using the pins. (If you're looking for a kit to mess around with a Pi, find something with a bread board, any kind of sensors, and a mix of male-male, male-female connectors to go from your pi to bread board, breadboard to breadboard.) Something like this, if you go barebones on the Pi. (Once you have your Pi running Octoprint, you can still use the electronics kit with another pi or arduino.)
The kit also gives you heat sinks, which is...okay. However, they don't give you any thermal paste to attach them — I might not be understanding how these heat sinks attach.
If you pressed for space getting a smart strip could be another option that is worth the cost. I use this one

This is definitely not it, but something interesting I discovered tonight. I was looking a couple of nights ago at the extension for stopping a print at a specific layer for a filament change. I didn't print anything with it; I just looked at the settings and stuff. Apparently, I turned the feature on during my looking. It was now active for any prints through Cura. Then I remembered the other night I was printing a file from Thingiverse and it suddenly paused in the middle of the job. I wrote it off as bad Gcode. Now I think that the pause-at-layer extension was active when I set up that job and the problem was me and not the job itself. By the way, when I first set up my 3B+, I got the low voltage message in Octoprint. Late to the party here, but are there any other common reasons for it? I am still getting that warning even what should be a good adapter. Haven't been seeing any ill effects from that I think
