I would recommend searing over a chimney. You can get the coals hot while the steaks are cooking then put them on the grates over the chimney to sear. It's the quickest method with the best results.

The cost to purchase a chimney and grate are pretty cheap. This grate will give you the best fitment for a chimney (I have the same grate and it's heavy duty!!). DISCLAIMER: Make sure the chimney isn't made of galvanized metal since it emits a poisonous gass when heated which will get on your food!!!

Here's an example video (17:24 if on mobile). Watch the entire video if you so desire. Spoiler: They both picked the chimney method.

I use a couple of cheap oven thermometers - About $7 each off Amazon. You could also move your probe around but I like to be able to check it, but I like being able to read left and right side at the same time.

First think I would check is how far your heat shield is off of the left wall of your smoker. With the GMG DB, this is the single most important measurement. Figure this out and you will be golden. I have found the sweet spot to be around 4.75 inches from the left side wall to get equal temps. I would try that as a starting point.

I use this Greek seasoning and love it! Everyone I ever make chicken for loves it too!

Cavenders Seasoning Greek, 8 oz https://www.amazon.com/dp/B004H81QOA/ref=cm_sw_r_cp_api_i_lToGDb063QS2E

Just a heads up, I rub olive oil on first to get the seasoning to stick well.

Solid from Amazon. I paid a little extra for the white. I also splurged on the SS Metals Depot axle and I'm glad I did, it looks great.

You can get the bucket at the hardware store, go with original on the handle and skip the side shelf. The side shelf really doesnt do much for me as the chimney takes up space and I installed an aftermarket rotisserie. Do the front shelf mod instead. You should look at the GMG owners facebook site, lots of great info there.

Yea it was way better than those really thin bbq grill splatter mats they sell for decks and that purpose. Plus the horse stall mats are super heavy duty and can be cut or notched fairly easily

Try this stuff:

Chemical Guys CLY_KIT_2 Medium Duty Clay Bar and Luber Synthetic Lubricant Kit (16 oz) (2 Items) https://www.amazon.com/dp/B00A8MZ7EY/ref=cm_sw_r_cp_api_3sr0BbTSP3QB6

I’ve used a variation of it for overspray removal on vehicle finishes.

Good luck to you! 👍🏻

I bought one of these. I caught it on sale. Better and easier than a cover. I keep it locked, just to discourage animals and nosy neighbors.

Thanks. For the last 10mo I have been using the Rec Tec Ultimate Blend or I use the CookinPellets in Hickory

I would keep a little gap between the fire pot and the pan. Put a brick on each of the sides and put the grate on top or something.

Or if you have a gas stove with removable grates then use those on top of the fire pot.

Similar to above. I chose these. They are short enough to stack, and can hold a 20lb bag.

You can also consider this pet food container. It's the same container, only with different plastic and a pour spout in the lid.

spatchcocking is the answer to your problem.

get a decent set of shears (these are the ones I use) and it literally takes about 20 seconds to spatchcock.

I despise walmart, but unfortunately it's the only place I have found with Jack Daniels locally, Amazon has them at twice the price https://www.amazon.com/Delight-Jack-Daniels-Smoking-Pellets/dp/B00PIVDAD0

I mix these about 50/50 with the big trager bag from Costco

Here's my suggestion on knife sets and add-ons, Victorinox on Amazon. These are very high quality, but not so expensive that I get upset when my wife uses them or if they get accidentally run through the dishwasher. The included honing steels is a must. I picked up a hand-held sharpener along the way, but I rarely need to use it if you take care of the blades. This set has been in regular use for the last 5-years and always performs.

I see a lot of folks shitting on Treagers for some reason. I have a old one (BBQ70) and it's rock solid. It HAD the old switch the OP talks about but after I changed that controller to an Ortech Digital Controller a few years ago, I couldn't be happier.

$70 vs $1,000 was a no brainier.

hmm just as it normally runs, I think a little over 400. However, I wanted to make pizza one day so I took out all the inside parts and laid my pizza steel right on the fire ( this fits perfectly inside https://www.amazon.com/gp/product/B00LBKWSKS/ref=ppx_yo_dt_b_search_asin_title?ie=UTF8&psc=1 ) and I stopped up one of the exhaust vents with tinfoil. Doing that I think I got around 550.
