Forget software! That's only helpful for a first few words (A1).
For anything higher, you'd want to get a good grammar book (like this one and a language learning book. I used 'Taal Vitaal', but that's for German-speakers, which mean I can't really recommend one for English-speakers.
Maybe you can even do a language course. I always found them to be too slow for me, so I stopped and learned the language using books.

P.S.: If you're planning on working in the Netherlands, learning Dutch is probably one of the best things you can do. As you've probably seen in the two years you were in Utrecht, you can come by with English only, but you never get to dive in and not be regarded as a foreigner.
Also having a native-speaker around you to practice with helps a lot.
As an IT guy myself, look into industry certs. My field is mostly server-related sysadmin stuff, so I'm not sure it works in your field though.
For example, for my field, you could just order a book like this for $40, and when you've read it, done examples/excercises on VMs to the point where you're confident enough, just go take the exam for $150.
After that $200, you can be a Microsoft Certified Professional.
In terms of knowledge, these certs aren't walks-in-the-park, that's why they're valuable on a CV, but if they're in a field that you're already knowledgeable about, then just getting that already-present knowledge certified shouldn't be too difficult.
And they are great for CVs, because that one line on the CV mentioning the cert, it summarizes an approximate amount of skills and knowledge that you have, and suggest a minimum amount of intelligence and trainability. In that sense, it's similar to a degree.
I am a bit late, but I would highly recommend James Kennedy's A Concise History of the Netherlands (https://www.amazon.com/Concise-History-Netherlands-Cambridge-Histories/dp/0521699177)

It doesn't look like much but it is a really intelligent book about visual communication and a bit of art education as well.
The author of this article, Russell Shorto, has a special interest in the Netherlands and has written a lot on the subject. I recommend reading his book Amsterdam, A History of the World's Most Liberal City as well. It's a good read, well researched and not so much a history book but actually more of a philosophical essay on the Netherlands' central role in the development of modern liberalism.
You have three months, should be doable esp. if you have serious background knowledge.

You could translate some exams of previous years from Dutch to English. On ccvx there is also an old exam in English.
I have no idea why you need this for studying medicine, seems to me that a biochemistry course would be much better, but OK it's their decision.

Zo te zien is De Dikke Vegetariër de vertaling van het boek How to Cook Everything Vegatarian. DDV is wel nog de eerste druk, het gelinkte boek (ook op Bol te koop) is de nieuwe versie. Als je kijkt naar de "100 Essential Recipes" achterin bij de index lijkt 50%+ ook wel vegan, en de reviews laten het klinken alsof bij de gene die niet vegan zijn er staat hoe je ze makkelijk vegan kan maken.
Mocht de andere commenter niet meer reageren over DDV, dit is de productpagina van de 1e druk op Amazon (en dus het origineel van de DDV). Helaas geen inkijkexamplaar, maar misschien heb je wat aan de recensies.

1e gaat vooral over koopkracht groei vergeken met technologische vooruitgang.
Als je echt simpele termen wil oid, is dat natuurlijk moelijk (hier kan je echt een levenstudie aan toewijden). Dit is wel een goed boek om mee te beginnen, misschien kan je ergens een korte samenvatting vinden hier van. Pikkety is ook heel erg aan te raden en daar zijn wel goedkope samenvattingen van. Dit is ook wel boeiend, alleen natuurlijk wel behooooooooooorlijk normatief.
Historisch onderzoek sure, antropologisch onderzoek, sociologisch onderzoek, psychologisch onderzoek.
Als je bijvoorbeeld gaat bediscussieren of religie al dan niet goed is voor de samenleving, dan verwacht ik dat je psychologische studies over de relatie tussen religiositeit en fysieke en mentale gezondheid bespreekt, dat is namelijk een veel onderzocht topic geweest de laatste paar decennia.
Bijvoorbeeld van dit standaardwerk, p. 313:

Ik bedoel, je kunt het daarmee eens zijn of niet, maar iemand als Dawkins schijnt zich er niet eens van bewust te zijn dat dergelijk onderzoek is gedaan en dergelijke literatuur bestaat.

Van mij mag iedereen overal een kijk op hebben, maar je moet niet pretenderen dat je een wetenschappelijke kijk op religie hebt wanneer je geen flauw idee hebt van wat de wetenschap nou eigenlijk over religie zegt.
Ik moet toch ook op de hoogte zijn van wat de huidige staat van zaken is in de wetenschap met betrekking tot, laten we zeggen, quantummechanica, voordat ik daar vergaande uitspraken over doe? Anders klets ik gewoon uit mijn nek.
Quantummechanica is een erg theoretisch onderwerp terwijl religie een sociaal alledaags fenomeen is en daarom kunnen we daar allemaal wel over meepraten, maar als je de wetenschap hoog in het vaandel hebt staan moet je niet zomaar dingen gaan claimen die gewoon niet gebaseerd zijn op wetenschap.
