I've got a Crosstrek as well, if you end up doing a build like this make sure you post it! I've slept in mine with this little tri-fold 75" futon https://www.amazon.com/Black-Floor-Tri-Fold-Density-Pounds/dp/B004SOQGVQ and it has actually been surprisingly comfortable. But it eliminates most of my storage room and I would like to fit two people plus storage under the futon. I think it is doable though!

DC-DC is preferred for the reasons you note. There are tons of DC laptop chargers and usb outlets.

On parts of my build where they would show and need to access plugging I am using this kind of usb outlet (about 1/2 the price on eBay). Where they do not show and I need a permanent 5v supply I use bare components kinda like this, which are about $2-$3 each shipped from China. Both are on switches so the converters aren't using power when not in use.

Just so you know, DC-DC isn't DC to DC. It's still DC to AC to DC. The 12v xA input from the battery is converted into high freuquency AC (so high efficiency when compared to an inverter) then rectified back to DC at the appropriate voltage.

Agreed, bleach is a great way to attack mold. Once you have done this, let the wood dry really well before doing anything with it. Alternatively, you could try using some mold killing primer: https://www.amazon.com/Rust-Oleum-276087-Killing-Primer-Quart/dp/B00K7FEQPI
