Sheets of black felt are good, they can be cut to the size of each "reveal" and work well with 3D terrain or 2D flat maps.

That said, I usually take the easy way out and have my players find a map of the dungeon at some point early on, to "justify" having the layout presented to them before they explore (though I keep creatures, treasure, debris, etc, hidden until they detect them).
