you could get this one for your xbox and this one for your pc i cant really recommend you headphones though

Should do pretty well in the games you play, although I dont know if you can stretch LOL out to three screens.
I looked into SLI'ing two 1080ti's because it's in your budget, but honestly SLI is really poor in the current gaming scene.
It seems like nvidia arent putting much effort into supporting it any more which is a shame.
If you want 3 completely new monitors, the thin bezel ones are the way to go.

Good basic thin bezel IPS monitor. Its only drawback is it doesnt come with VESA mounts for triple monitor stands but you can buy an adapter.

Glorious PC Gaming Race extended mouse pad. Ducky Shine 5 with brown switches and Ducky YOTG keycaps. Main monitor is an Acer 27" 1440p/144hz Freesync IPS panel. The two side moniotrs are Asus 23" 1080p/60hz IPS panels. The chair is an Ikea chair (looks like they don't sell it anymore).
