Hi, new subscribee! I have a couple of things I've finished recently, but I noticed that it's Work in Progress Wednesday, so this is the item I'm currently working on!

You should make this cake. I loooooove this cake. You can make it as cupcakes too, if you only want a bit of evil at a time. It is a very moist cake, and it is seriously delicious. If you're not a fan of mint, you can leave it out, but I think it makes it amazing. The batter will be very runny after you add the boiling water, which is a bit different, but it works. Just roll with it.
Ultra evil choc mint cake
2 cups flour
2 cups sugar
2 eggs
2/3 cup cocoa
2 teaspoons baking soda
1/2 teaspoon salt
1 teaspoon vanilla
1 cup oil
1 cup milk
1 cup boiling water
2 tsp peppermint extract
Mix all ingredients except water well. Add the boiling water boiling water and mix only until completely incorporated.
The recipe makes a 9 x 13 cake baked at 350 for 40 minutes. I baked the cupcakes at 325 for 18 minutes.
I prefer to top with cream cheese icing. NOM NOM NOM.
