For the most part, between physical and digital distribution it's becoming less and less likely for games to sell out at launch.
However, a way to do this effectively is to preorder super limited editions of games and sit on them as the value appreciates. For example, a friend of mine preordered this before it sold out for the retail price of $150, and it's already doubled in value. And the game was only released yesterday.

Honestly I would say....
If you just want to play the game....go physical
If you want to play the game and get a bunch of goodies...Go Physical Limited
If you want a complete destiny experience without all the bric-a-brac go Digital Guardian Edition
If you are really crazy...like me...you could always go insane
Idk, it says here on Amazon under the contents section of the ghost edition that it comes with a "limited edition steelbook case and game disc."
